Grain Free Blueberry Tart

Preheat oven to 350. In the food processor, grind the almonds
- 2 cups raw cashews (soaked overnight)
- 2 1/2 cups almonds
- 15 medjool dates
- 2 T coconut oil
- 3 T maple syrup
- 1 tsp ground vanilla bean
- 3 cups fresh blueberries
Chai Coconut Ice Cream

If you own a large blender, blend all of the ingredients until smooth
- 2 14 ounce cans of full fat coconut milk
- 1 tablespoon of vanilla extract
- 1 teaspoon cinnamon
- 1/8 teaspoon each of ground nutmeg, cloves, and cardamom
- A pinch or two of unrefined salt
- 1/2 cup of pure maple syrup (I prefer grade B) or a combination of maple syrup and raw honey – raw honey is sweeter, so a version made with 1/4 cup of each still has the maple flavor, and is also sweeter from the honey.

1. Combine first 6 ingredients in a medium bowl, tossing gently

- 1 cup (150g) all-purpose flour

Mini Gorditas Stuffed With Chorizo and Cheese

1. Combine all of the ingredients for the pico de gallo, adding 1 teaspoon of salt
- For Pico de Gallo:
- 2 cups masa harina (such as Maseca)
- 1 1/2 to 1 3/4 cups warm chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1 cup cooked Mexican chorizo (about 1 10-ounce link)
- 1 cup shredded Monterey jack or sharp cheese
- 1/4 cup green onions, finely chopped
- 1/4 cup cilantro, finely chopped
- Canola oil for frying
- 4 to 5 Roma tomatoes, diced
- 1 small red onion, diced
- 1 clove garlic, minced
- 1 serrano or jalapeño pepper, minced
- 1/4 cup cilantro, finely chopped
- Juice of 1 lime
- Salt to taste
