Yogurt-Curry Marinated Chicken Thighs

This healthy chicken thigh recipe is tender and packed with flavor, thanks to a yogurt-based marinade
- 1 cup nonfat plain yogurt
- 1/3 cup onion, grated (about 1 medium)
- 3 tablespoons curry powder
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon crushed red pepper
- 4 large or 8 small bone-in chicken thighs (about 2 pounds), skin removed
Steak Tacos with Cilantro-Radish Salsa

Heat 1 Tbsp. oil in a large skillet over high heat
- 2 tablespoons vegetable oil, divided
- 1 pound skirt or flank steak
- Kosher salt and freshly ground black pepper
- 1/2 cup fresh cilantro leaves with tender stems, divided
- 4 radishes, trimmed, chopped
- 2 spring onions or 4 scallions, white and pale-green parts only, thinly sliced
- 1/2 serrano chile or jalapeño, seeds removed if desired, finely chopped
- 2 tablespoons fresh lime juice
- 8 corn tortillas, warmed
- 2 oz. queso fresco or Cotija cheese, crumbled
Pastelitos de Dulce de Membrillo

Sift together all dry ingredients and pulse in the food processor, 1-2 pulses to distribute evenly
- For the pastry:
- 2 cups unbleached, all-purpose flour
- 10 tablespoons butter, chilled and cut into small pieces
- 1/8 teaspoon salt
- 1 teaspoon fresh lemon juice
- 1 egg yolk
- 1/2 cup ice water
- 1/2 cup unsalted butter, melted and cooled
- 1/4 cup unbleached, all-purpose flour
- 4-5 ounces of membrillo/quince paste, homemade or store-bought
- For the syrup (optional):
- 1/2 cup sugar
- 2 tablespoons water
- 1/4 teaspoon vanilla extract
- Optional garnish: powdered or granulated sugar and cinnamon
German Fried Potatoes

Slice your potatoes into rounds, if pre baked thick slices work good and if raw thinner slices are in order
- 5 – 8 potatoes. (Raw or cooked) You can also add sweet potatoes to this mix.
- 1/4 cup oil or butter OR 8 slices bacon, diced
- 1 large onion, sliced.

Orange Chicken Stir-Fry with Crispy Garlic Dressing

- 2/3 cup brown rice
- 1 tbsp olive oil, divided
- 7 1/2 oz BPA-free canned chickpeas, drained, rinsed and dried
- 1/4 tsp sea salt
- Pinch ground cayenne pepper
- 1 bunch broccoli, trimmed
- 4 cloves garlic, thinly sliced
- 1 tbsp rice wine or apple cider vinegar
- 16 oz boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 zucchini, thinly sliced lengthwise
- 1 tbsp reduced-sodium soy sauce or tamari
- 1 tsp ground ginger
- 1 orange, peeled, segmented and cut into 1/2-inch cubes
- 2 green onions, sliced

Carrot Ginger Soup

This bright soup is super healthy with a flavorful kick
- 2 tablespoons extra-virgin olive oil
- 1/2 cup chopped white onion
- 4 cups chopped carrots
- 4 cups vegetable broth
- 1 cup orange juice
- 1 tablespoon plus 2 teaspoons finely grated fresh peeled ginger
- 1 tablespoon lemon juice
- 14-ounce can coconut milk
- Freshly ground black pepper, to taste
Chicken Breasts Stuffed with Raclette, Herbs, and Prosciutto

1. In a large mixing bowl, combine 1 1/2 cups of the white flour, the wheat flour, yeast, sugar, and salt
- 1 1/2 + cups all-purpose flour, divided
- 1 cup whole wheat flour
- 2 1/4 teaspoon yeast, or 1 envelope of yeast (It may say “For bread maker,” or “active dry yeast.”)
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 cup milk
- 6 tablespoons unsalted butter, divided
- 1 egg
- 1/2 cup firmly packed brown sugar
- 1 tablespoon cinnamon
Grilled Cilantro-Lime Shrimp with Spicy Hass Avocado Puree

- Spicy Hass Avocado Puree:
- 2 limes, juiced and zested
- 1/2 cup roughly chopped fresh cilantro
- 1 tsp. ground cumin
- 4 Tbsp. extra-virgin olive oil
- 2 lbs. large shrimp, peeled and deveined, tails intact
- Spicy Hass Avocado Puree (see make-ahead recipe below)
- Fresh sprigs cilantro, for garnish
- 3 ripe, Fresh Hass Avocados, peeled, seeded and scooped out
- 3 Tbsp. fresh lime juice
- 3/4 cup sour cream
- 1 green jalapeño, seeded and chopped
- Salt, to taste
