How to Make Nut Milk

- 1/2 cup all-purpose flour
- 1 large onion, diced
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped celery
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/2 cup sliced scallion
- 6 cloves minced garlic
- 4 cups chicken broth
- 1 teaspoon salt
- 10 oz package of frozen okra
- 1 teaspoon creole seasoning (Tony Chachere's)
- 2 lbs any combo of sausage or 2 lbs shrimp or 2 lbs chicken (etc.)
Maple Syrup Milkshake

Puree ingredients until smooth; pour into serving glasses and drizzle with more syrup, if you like

Yogurt-Fruit Muffins with Bran Crumb Topping

Preheat the oven to 425 degrees F
- BATTER:
- 12 ounces thick Greek peach yogurt
- 1 cup diced peaches, mangoes or pineapples
- 1/3 cup light brown muscovado sugar
- 1/3 cup pure cane sugar
- 1/2 cup canola oil
- 1/2 teaspoon pure vanilla extract
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- TOPPING:
- 1 cup bran cereal, such as All-Bran
- 1/4 cup walnuts
- 2 tablespoons pure cane sugar
- 2 tablespoons light brown muscovado sugar
- 6 tablespoons unsalted butter, melted

1. Cream butter and peanut butter with sugars and vanilla
- 1/2 cup butter (or margarine)
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 24 -36 miniature peanut butter cups

Spicy Green Bean and Shrimp Stir-Fry

Shrimp and Chinese long beans are stir-fried with sambal oelek, fresh garlic, ginger, mirin and soy sauce
- 1 lb shrimp or prawns (16 to 20 count)
- 1 tbsp sambal oelek (or to taste)*
- 2 tbsp soy sauce or kechap manis
- 1/4 cup mirin**
- Sambal Oelek is made of chilies with no other additives such as garlic or spices for a more simpler taste.
- Note: Mirin is sweetened rice wine. If you cannot find it, you could use some rice wine vinegar and a bit of sugar instead.
- 2 tsp garlic (about 3 to 4 cloves)
- 2 tsp ginger (about 1" -inch)
- 1/2 lb Chinese long beans*
- Note: Chinese long green beans available in most Asian grocery stores and many supermarkets. You can also substitute regular green beans if you like.
- 1 tbsp grapeseed oil
- 1 tbsp sesame oil (untoasted)
Dark Chocolate Almond Bundt Cake

- 1 bag Dark Chocolate Chips (you can use dark, semi-sweet, or milk chocolate chips depending on what degree of sweetness you'd like)
- 3/4 cup Heavy Cream
- Cake:
- 2 cups Flour
- 1 cup Ghirardelli Unsweetened Cocoa Powder
- 1/2 cup Instant Coffee Powder
- 1 tsp Baking Soda
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 3 Eggs
- 2 cups Brown Sugar
- 2/3 cup Vegetable Oil
- 2 tsp Vanilla Extract
- 2 tsp Almond Extract
- 1 cup Chocolate Pudding
Honey Cornbread Muffins

- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 cup granulated sugar
- 1 teaspoon salt
- 1 cup whole milk
- 2 large eggs
- 1/2 stick butter, melted
- 1/4 cup honey
- Special equipment: paper muffin cups and a 12-cup muffin tin
