- 1 cup low-sodium chicken broth
- 1 tablespoon chopped fresh basil
- 1/3 cup reduced-fat sour cream
- 3/4 teaspoon salt, divided
- 1/2 teaspoon freshly ground pepper, divided
- 1 pound ground beef, 85% lean or leaner
- 2 teaspoons finely chopped shallot
Mushrooms Stuffed with Cream Cheese & Bacon

Gently wipe mushrooms to rid of any grit or dirt
- 20-24 button mushrooms
- 8 oz cream cheese, softened
- 4 strips bacon, finely chopped
- 2 small shallots, peeled & finely chopped
- 1 to 2 cloves garlic, peeled & minced
- 1 cup chopped spinach
- 2 tbsp green onions, chopped
- 2 oz blue cheese, crumbled
- 1 tbsp dry sherry
- salt and pepper

1. Combine all of the ingredients for the meatballs, stir well to combine, cover and refrigerate until ready to use
- For Meatballs:
- 1 pound ground chuck
- 1/2 cup jasmine rice or long-grain white rice

- 2 teaspoons garlic powder
