- 24 jumbo pasta shells, (8 ounces)
- 1 1/2 teaspoons extra-virgin olive oil
- 2 onions, finely chopped
- 2 pounds fresh spinach, trimmed and washed, or two 10-ounce packages frozen chopped spinach, thawed and squeezed dry
- 2 cups part-skim ricotta cheese
- 2/3 cup plain dry breadcrumbs
- 1/2 cup freshly grated Parmesan cheese, divided
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt
- Freshly ground pepper, to taste
- 1 large egg white, lightly beaten
- 3 cups prepared marinara sauce, preferably low-sodium

- CRUST:
- 1 1/2 cups thin chocolate wafer cookie crumbs (about 30 cookies)
- 1/4 cup butter or margarine, melted
- FILLING:
- 1/4 cup all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 can (15-ounces) pumpkin (not pumpkin pie mix)
- 4 packages (8-ounces each) cream cheese, softened
- 1 cup packed brown sugar
- 2/3 cup granulated sugar
- 5 eggs
- TOPPINGS:
- 1/2 cup chopped pecans, toasted*
- 2 ounces bittersweet baking chocolate, coarsely chopped

Preheat oven to 450F. Coat cauliflower with the 1 tsp
- splash of Liquid Aminos
- splash water or vegetable broth
- 1 large onion, chopped
- 1 tsp. dried thyme
- 1/4 tsp. smoked paprika
- 5 cloves garlic, minced
- 3 large baking potatoes, peeled and chopped
- 4 cups vegetable broth
- 1 cup water
- 1 bay leaf
- 1 tsp. extra virgin olive oil
- 1/2 large head cauliflower, chopped
- ground black pepper
- 1 1/2 cups non-dairy milk (I used soy)
- 1/4 cup vegan Parmesan-style cheese (I used Go Veggie!)
- 1/4 cup nutritional yeast
- green onions, chopped, for garnish

1. Heat canola oil in a medium heavy saucepan over medium-high heat
- 1 tablespoon canola oil
- 1/4 cup unpopped popcorn kernels (about 6 cups popped)
- 1/4 cup dry-roasted cashews
- 1/3 cup sugar
- 1/3 cup maple syrup
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper
Italian Egg-Drop Soup

Italian egg-drop soup, Stracciatella, is traditionally a light soup made with just chicken broth, eggs and herbs
- 6 cups reduced-sodium chicken broth
- 2 cups water
- 1 1/3 cups whole-wheat medium pasta shells or other small pasta (4 ounces)
- 1 7-ounce can chickpeas, rinsed
- 1 bunch scallions, sliced, whites and greens divided
- Pinch of freshly grated nutmeg
- 3 cups chopped arugula, any tough stems removed
- 4 large eggs, lightly beaten
- Freshly ground pepper to taste
- 2 tablespoons lemon juice
- 6 tablespoons freshly grated Parmesan cheese

- For the Drop Biscuits:
- 1/2 cup brown rice flour (58 grams)
- 1/2 cup white rice flour (68 grams)
- 1/2 cup sorghum flour (64 grams)
- 1/2 cup tapioca flour (61 grams)
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1/4 teaspoon baking powder
- 4 tablespoons cold butter, cut into small cubes
- 1/4 cup mascarpone (full-fat cream cheese could work here too)
- 1 cup buttermilk
- 1 tablespoon melted butter
- For the Sausage Gravy:
- 1 pound pork sausage
- 1/4 cup potato flour
- 1 tablespoon ground black pepper
- 1 teaspoon kosher salt
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground nutmeg
- Dash Worcestershire sauce
- 3 cups whole milk

- 1/2 1/2 1/2 cup instant brown rice
- 2 2 2 teaspoons sesame oil
- 1 1 93%-lean pound 93%-lean ground turkey
- 1 1 1 tablespoon minced fresh ginger
- 1 1 1 large red bell pepper, finely diced
- 1 8-ounce 1 8-ounce 8-ounce can water chestnuts, rinsed and chopped
- 1/2 1/2 1/2 cup reduced-sodium chicken broth
- 2 2 2 tablespoons hoisin sauce, (see Note)

Homemade Chai Tea Concentrate

In a medium pot, bring the water and sweetener to a boil and simmer until the sweetener is fully dissolved
- 6 cups water
- 1/3 cup sucanat, or rapadura, or natural sweetener of your choice
- 2-3 ″ fresh ginger, sliced
- 5 cinnamon sticks
- 1 teaspoon peppercorns
- 2 vanilla beans
- 3 star anise
- 15 cloves
- 5 allspice (optional)
- 2 teaspoons cardamom seeds
- 5 black tea bags
- Milk of your choice (both dairy and non-dairy milks will work)
