  • 1 large onion, chopped
  • 1 tsp. dried thyme

  • 3 large baking potatoes, peeled and chopped
  • 4 cups vegetable broth
  • 1 cup water
  • 1 bay leaf
  • 1 tsp. extra virgin olive oil
  • 1/2 large head cauliflower, chopped
  • ground black pepper
  • 1 1/2 cups non-dairy milk (I used soy)
  • 1/4 cup vegan Parmesan-style cheese (I used Go Veggie!)
