- 1 tablespoon thinly sliced shallot

1. In a 3-quart stockpot, heat the olive oil over medium heat
- 1 to 2 tablespoons of olive oil
- 1 large white onion, diced
- 2 garlic cloves, minced
- 1 (or more) jalapeno peppers, deseeded and minced
- 2 ripe tomatoes, diced
- 10 oz (about 5 medium) tomatillos, husked, washed, roughly diced
- 3 sprigs of thyme
- 2 bay leaves
- 2 large boiling potatoes (I used Yukon gold), peeled and diced
- 1 quart chicken stock
- 2 cups packed fresh purslane, chopped into 1-inch pieces (I use

Brothy, Garlicky Beans

Put the beans in a large heavy pot and cover them by about an inch with cold water
- 1 pound white beans, rinsed and drained
- 3 cups chicken stock (homemade or low sodium)
- 2 medium shallots, halved and peeled
- 4 fat cloves garlic, peeled and smashed
- 1 stalk of celery, preferably with its leaves, cut into 3-inch lengths
- 1 large carrot, peeled and halved
- 2 scallions or spring onions
- 1 sprig thyme
- 1 sprig rosemary
- 2 tablespoons good olive oil, plus more for serving
- Sea salt
- Parmesan rind (optional but recommended)
