Linguine in Clam Sauce

- Ingredients
- 1 package (1 pound) linguine
- 1 large sweet onion, finely chopped
- 2 tablespoons olive oil
- 1 medium Yellow or Red sweet pepper, diced
- 2 garlic clove, minced
- 3 cans (6-1/2ounces each) chopped clams
- 1/2 pound sliced fresh mushrooms
- 2 teaspoons chicken bouillon granules
- 2 Tablespoons white wine
- 1 teaspoon minced fresh basil
- 1/8 teaspoon pepper
- Shredded Parmigiano Reggiano cheese

Best I've ever had
- 1/2 to 3/4 cup Olive Oil
- 2-3 Cloves crushed garlic or minced
- 1-2 Raw eggs
- 1 small can chopped anchovies
- Coarse Salt & Pepper to taste
- Lemon Juice to taste
- 1 Tablespoon Yellow Mustard Powder or wet
- 5-6 drops Tabasco or more to taste
- 1-2 Tablespoons Worcestershire Sauce
- 4-6 Tablespoons Parmesan Cheese
- 2-3 Heaping Tablespoons Mayonnaise

Stovetop instructions: Heat a grill pan over medium-high heat until very hot
- 4 cups cooked wild rice
- 1/2 cup Churriguera, pesto, or other favorite flavorful sauce
- 1 pound cremini or baby Bella mushrooms

- 3/4 pound boneless skinless chicken breasts, cubed

Quick and Easy Blender Salsa

This super simple blender salsa is a great alternative to fresh pico when tomatoes aren't at their best
- 1- 14 oz can diced tomatoes
- 1- 10 oz can Original Rotel (Diced tomatoes & green Chilies)
- 1/2 small onion, roughly chopped
- 1 clove garlic, peeled and smashed
- 1/2-1 jalapeno, seeded or not (depends on how spicy you like it)
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- small to medium size handful of cilantro, washed
- juice of 1 lime
