Perfect Pie Crust

Directions Dice the butter and return it to the refrigerator while you prepare the flour mixture
- 12 tablespoons (1 1/2 sticks) very cold unsalted butter
- 3 cups all-purpose flour
- 1 teaspoon kosher salt
- 1 tablespoon sugar
- 1/3 cup very cold vegetable shortening
- 6 to 8 tablespoons (about 1/2 cup) ice water
Watermelon Cooler

Directions In a food processor, blend watermelon, sorbet, and lemon zest until very smooth
- 1 1/2 lbs (4 cups) sliced seedless watermelon, rind removed
- 1 cup lemon sorbet
- 1 lemon, zested
- 1 1/2 cups cold water
- watermelon wedges and mint, for garnish
Banana Cream Pie

- 1 cup sugar
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 3 cups 2% milk
- 2 eggs, lightly beaten
- 3 tablespoons butter
- 1-1/2 teaspoons vanilla extract
- 2 large firm bananas
- 1 pastry shell (9 inches), baked
- 1 cup heavy whipping cream, whipped

Crab encrusted Halibut

- 1 cup panko bread crumbs (Japanese bread crumbs)
- 1 lb crab meat (Dungeness crab is best)
- 4 6- oz. halibut fillets
- Kosher salt, black pepper and Old Bay seasoning, to taste
- 1 cup all purpose flour
- 3 whole eggs
- 1 oz. vegetable oil
- 1 oz. unsalted butter
- 1 cup Mae Ploy sweet hot chili sauce
- 1/2 cup heavy cream

- 1 large handful of cherries
- 1 handful of red grapes
- 1 large carrot
- 2 in (5 cm) piece of fresh root ginger
- 4 small pieces turmeric root

- 1 cup panko bread crumbs (Japanese bread crumbs)
- 1 pound crab meat (Dungeness crab is best)
- 4 6- ounce. halibut filets
- Kosher salt, black pepper and Old Bay (McCormick) seasoning, to taste
- 1 cup all purpose flour
- 3 whole eggs
- 1 ounce vegetable oil
- 1 ounce unsalted butter
- 1 cup Mae Ploy sweet hot chili sauce
- 1/2 cup heavy cream
- Preheat oven to 350° F.

- 2 (8 ounce) packages cream cheese, softened
- 1 pound lump crabmeat, drained
- 1 (14 ounce) can artichoke bottoms, drained and chopped
- 6 ounces shredded white Cheddar cheese
- 1/2 cup finely diced red bell pepper
- 1/3 cup chopped green onions
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 2 teaspoons chopped fresh tarragon
- 1 teaspoon Worcestershire sauce
- 1 pinch cayenne pepper, or more to taste
