Ingredients
- Chicken, cooked and chopped (I use rotisserie chicken)
- 2 Calabaza (Mexican Squash or Zucchini Squash), diced
- 1 large onion, diced
- 2 tsp garlic
- 1 Tbsp cumin
- 2 tomatoes (fresh or cans of diced; I like Fire Roasted)
- 1 can whole kernel corn
- 2 cans Chicken Broth (or Better than Bouillon Roasted Chicken Base plus water)

Preparation
Step 1
If starting with raw chicken, cook the chicken in a little oil with the onion & garlic in a stockpot. When almost done, add squash and cook until squash softens a little bit.
Add remaining ingredients and cook until heated through and eveyrthing has time to marry. Taste and adjust seasonings as necessary.
