Betty Zoeller's Yummy Quiche

Whip the eggs until almost frothy, and then start adding milk, spinach, and the remaining ingredients
- 1 8 oz. can milk (cans come in 6 oz. this time I added water to rinse can and add)
- 3 eggs
- 1/2 pkg. frozen spinach
- 1/2 (or less) t. salt, Black pepper to taste
- 4 green onions (can sub dehydrated onions)
- 2 T. Parmesan cheese
- 2 T. Feta cheese
- 1/2 c. Havarti (plus a little) (when I use Havarti the recipe is certainly creamier and richer)
Peanut Butter Fudge

Mix sugar, milk & salt and bring to a boil over medium heat
- 2 c sugar
- 2/3 c milk
- dash salt
- 2 t vanilla
- 1 c peanut butter
- 1 T butter
Mango Margaritas

Begin by zesting the limes
- 2 limes
- 2 tablespoons coarse sugar (I use decorator's sugar, regular sugar will work fine though)
- Two 20-ounce jars mango chunks, drained
- Ice, for blending
- 1 1/2 cups tequila
- 1 1/2 cups triple sec
- 1/2 cup granulated sugar

- For serving:
- 1 lb ground beef
- 1 c refried beans
- 1 med onion, chopped
- 1 c shredded Jack cheese
- 1 clove garlic, minced
- 1/3 c salsa
- 1/2 tsp salt
- 12 flour tortillas (8")

Spinach-Ricotta Stuffed Pasta Shells

Linda Thomas (recipe on back of Davinci Jumbo Shells, altered slightly!)
- 36 DaVinci Jumbo Shells (prepared according to package), do not over cook
- 24 oz. (2 - 12 oz. pkg.) frozen chopped spinach
- 1/4 c. chopped onion
- 2 T Olive Oil
- 2 beaten eggs
- 2 c. Ricotta cheese
- 1 1 /2 c. grated Parmesan Cheese
- 1/4 tsp. ground nutmeg
- Classico Alfredo Sauce
Tiramisu Toffee Trifle Pie

- 1-1/2 Tbsp. instant coffee granules
- 3/4 c warm water
- 1 (10.75 oz.) pound cake
- 1 x 8-oz. pkg. mascarpone or cream cheese, softened
- 1/2 c powdered sugar
- 1/2 c chocolate syrup
- 1 (12 oz.) container frozen whipped topping, thawed and divided
- 2 (1.4 oz.) English toffee candy bars, coarsely chopped
Charleston Cheese Dip

Preheat the oven to 350 degrees F
- 1/2 cup mayonnaise
- One 8-ounce package cream cheese, softened
- 1 cup grated sharp Cheddar cheese
- 1/2 cup grated Monterey Jack cheese
- 2 green onions, finely chopped
- 1 dash cayenne pepper
- 8 butter crackers, crushed, such as Ritz
- 8 slices bacon, cooked and crumbled
- Corn chips, crackers or bagel chips, for serving

- 2 skinless boneless turkey breasts
- 1 cup chopped pecans
- 2 (8 ounce) packages dried, sweetened cranberries
- 2 tablespoons olive oil
- 6 lettuce leaves
- 1/2 cup pecan halves
