Coconut Carrot Cake

Preheat oven to 350F. Grease and flour two 9-inch round cake pans or line two muffin tins with paper cups
- Cake:
- 1 3/4 cups granulated sugar
- 3/4 cup vegetable oil
- 1/4 cup cream of coconut
- 3 eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
- 1 (8-ounce) can crushed pineapple, undrained
- 1-1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 2 cups shredded carrots
- 1 cup flaked coconut
- 1 cup walnuts, chopped
- Frosting:
- 1 cup butter, softened
- 1 cup cream of coconut
- 1 teaspoon salt
- 1 teaspoon coconut extract
- 4 cups powdered sugar
Harvest Grain Pancakes with Nuts

Lightly oil a skillet or griddle, and preheat it to medium heat
- 3/4 cup quick oats
- 3/4 cup whole wheat flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1-1/2 cups buttermilk
- 1/4 cup vegetable oil
- 1 egg
- 2 tablespoons granulated sugar
- 3 tablespoons chopped pecans
- 3 tablespoons chopped walnuts
- blueberry, maple, butter pecan, or strawberry syrup, or whatever floats your boat
Blueberry Hand Pies

Preheat oven to 375 degrees F and grease a large baking sheet
- Sweet Butter Pie Dough:
- 1 batch of sweet butter pie dough (recipe below)
- 2 cups fresh or frozen blueberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- 1-1/4 cups all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 teaspoon vanilla extract
- 3-4 tablespoons cold buttermilk (or milk with a bit of lemon juice)

- 1 (17.5 ounce) pouch sugar cookie mix (such as Betty Crocker)
