Beet, Carrot and Fennel Slaw

This beautiful red salad is almost 100% raw and vegan
- 3 large beets (about 1 pound), peeled and coarsely shredded
- 3 large carrots (about 3/4 pound), coarsely shredded
- 1 fennel bulb, coarsely shredded
- 1 tablespoon agave nectar
- 3 teaspoons toasted sesame seeds, divided
- 3 tablespoons peanut or canola oil
- 3 tablespoons fresh lemon juice (about 1 lemon)
- 2 tablespoons seasoned rice vinegar
- 1 tablespoon soy sauce
- 2 teaspoons sesame oil
- 1 teaspoon minced fresh ginger
- Salt, to taste
- Freshly ground pepper, to taste
Dried Plums AKA Prunes

Garbanzos con espinacas

A traditional Spanish/Moorish style dish that was featured on NPR as a strong contender in the nutrition/cost ratio
- 9 ounces dried garbanzos (chickpeas)
- Pinch bicarbonate of soda
- 6 garlic cloves, peeled and whole
- 1/4 cup Spanish extra-virgin olive oil
- 2 ounces white sliced bread, with the crusts removed
- 2 tablespoons pimenton (Spanish sweet paprika)
- 1 pinch Spanish saffron
- 2 tablespoons Spanish sherry vinegar
- 1/2 pound spinach, washed and cleaned
- 1 teaspoon ground cumin
- Salt and white pepper to taste
Chinese Omelette

Quick, simple, and delicious! You can make substitutions to suit your taste and what you have on hand
- 50 g snow peas, trimmed, thinly sliced
- 50 g beansprouts, trimmed
- 1 green onion, thinly sliced
- 1 long red chile, thinly sliced
- 1 cm finely grated piece of ginger
- 1 clove garlic, crushed
- 2 Tbsp oyster sauce
- 4 Eggs
- olive oil

Take these along with you to an event where bread or crackers is being served, and use them for dip
- 1/2 C chestnut flour
- 1/2 C flax (linseed) meal
- 1 Tbsp psyllium husk flakes or powder (optional)
- 1 1/2 Tbsp virgin coconut oil
- 1 egg or egg white
- pinch salt
- 2 tbsp powdered sweetener such as sugar or stevia, liquid (rice syrup) (optional)
- 1 tsp baking powder
- 1-2 Tbsp olive or grapeseed oil
- 1/4 tsp sesame oil (optional)
- 2 tsp sesame seeds or almond meal (optional)
- approx 1/4 C water
- up to 2 Tbsp white flour (optional)

No Fail Blackberry Cobbler

My husband wants food easy
- Blackberries to fill a 9 x 13 baking pan 3/4 to the top
- 1 package yellow cake mix
- 1 stick butter or cookable margarine, cut into 1/4" pieces
- Water
- 1 tablespoon lemon juice or water
Shrimp wth Maifun and Tangy Dressing

Another way to use that scrumptious miso jalapeno sauce from Duo Dishes
- 4 radishes, sliced
- 1/4 daikon, sliced
- 1 carrot, grated
- 3 ounces maifun
- 1/2 pound peeled shrimp, raw
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- 1 tablespoon cilantro
- 2 teaspoons grapeseed oil
- 1 1/2 cups Jalapeno Miso Dressing (see seared Tofu recipe in this collecton.)
Pagach

This is a comforting way to use cabbage
- 3 1/2 cups flour
- 1 teaspoon salt
- 2 1/4 teaspoons dry yeast
- 1/4 cup warm water
- 1 tablespoon of sugar
- 2/3 cup scalded milk, cooled to lukewarm
- 1 egg
- 1/3 C butter, melted (I use half EVOO)
- 1 medium to large head of cabbage, chopped
- 1 medium onion, diced
- 4-6 tablespoons of butter (again I cut with EVOO)
- salt and pepper
- *Optional: 1/4 teaspoon of granulated garlic
Asian Carrot Radish Slaw

Another delicious and healthy raw salad
- 2 carrots, grated
- 1 turnip, grated
- 1 beet, grated
- 1 savoy or napa cabbage, chopped
- 1 bunch radishes, chopped or grated
- 1 leek sliced and diced
- 1 " chunk fresh ginger, minced
- 2 shallots, chopped
- 1/4 C rice vinegar
- 1 Tbsp soy sauce
- 1 Tbsp red miso
- 2 Tbsp sesame oil
- 2 Tbsp grapeseed oil
- 1/8 tsp salt
- 1/4 C water
