- 1/2 C plain yogurt
- 1/2 C milk
- 1 ripe Mango pitted, peeled and chopped
- 1.5 tsp agave nectar
- 1/2 tsp vanilla
- pinch cardamom
- pinch nutmeg
- pinch clove
- lemon slice (optional for garnish)
Parsley Dog Breath Cookies

These are meant to cure doggie bad breath
- 3 C minced fresh parsley
- 1/4 C grated carrot
- 1/4 C grated cheese
- 2 Tbsp vegetable oil
- 2 C whole wheat flour
- 2 Tbsp bran
- 2 tsl baking powder
- 2 Tbsp nutritional yeast
- 1/4 C cornmeal
- 1/2-1 C water or chicken broth

Grilled Eggplant Stacks

Eggplant
- 2 lbs eggplants, peeled and sliced
- 1/3 cup olive oil
- 1/3 cup fig balsamic vinegar
- 2-4 garlic cloves, minced
- 1/4 teaspoon black pepper
- 1 pinch chili pepper flakes
- 1 teaspoon fresh thyme, loose packed
- 1 teaspoon fresh rosemary, loose packed
- 1 teaspoon fresh oregano, loose packed
- 10 ounces mozzarella cheese (thinly sliced or shredded) (optional)
- 3 tomatoes, sliced thin (optional)
Souphet - Thai Maitake Salad

This turns out to be really more of a relish than a salad
- 4 cups shredded Maitake (1 1/2 by 1/4 inch strips)
- peanut or canola oil for frying
- 1/4 cup of chopped fresh mint leaves
- 1/4 cup of chopped fresh Cilantro
- 2 scallions or green onions chopped
- Juice of 1/2 of a lime
- 1/2 a teaspoon of ground cayenne pepper (or hot red pepper flakes)
- 1 tablespoon rice
- 3/4 tablespoon oriental fish sauce
- 1 tablespoon sugar
- Pinch of salt
Texas Caviar

Texas Caviar is a healthy and economical option to fattening dips
- 1/2 Walla Walla onion, finely chopped
- 1 bunch green onions, chopped
- 1 green bell pepper, chopped
- 6 jalapeño chiles, minced
- 1 Tbsp garlic, minced
- 2 Tomatoes, chopped
- 8 oz zesty italian dressing
- 1 large can Hominy
- 2 cans blackeye peas or 1 Cup dry, cooked
- salt (to taste)

- lime wedges
- fresh cilantro for garnish
Vegetarian Fajitas

A hearty dish the vegetarians among us lapped up
- 2 portobello mushrooms, stemmed, cut in to 8-12 wedges each
- 1 zucchini, sliced
- 1 onion, minced
- 1 purple bell pepper, sliced in strips
- 1 green bell pepper, sliced in strips
- 1 red bell pepper, sliced in strips
- 1-2 Tbsp canola or corn oil for sauteeing
- 2 cloves garlic, minced
- 1 Tbsp cornstarch
- 1 Tbsp chili powder
- 1 tsp salt
- 1 tsp paprika
- 1 tsp brown sugar
- 1/2 crushed vegetarian bouillon cube
- 1/4 tsp cayenne pepper
- 1/4 tsp. crushed red pepper flakes
- 1/2 tsp. cumin
Vegan Gumbo

This yummy gumbo is veganissimo, and is easily adapted for the veggies that you have on hand
- 2 C Walla Walla onions, diced
- 3 C Vegetable stock
- 7-8 Tomatoes chopped
- .5 C carrots sliced
- 4 C Okra, tops & ends removed, sliced 1/4"
- 1 Poblano chile, roasted & chopped
- 1 jalapeno, minced
- 1/4 C Olive oil
- 1 zucchini, sliced
- 1 C corn kernels
- 3-6 cloves garlic, minced
- 2 Asian eggplant, chopped (optional)
- 10 oz tofu, cubed
- 1.5 tsp cayenne
- 1 tsp red pepper flakes
- 1 tsp salt
- 1 tsp black pepper
- 1.5 tsp oregano crushed
- 1.5 tsp thyme crushed
- 3 tsp paprika
Sweet Potacos

I slightly modified this recipe from my friend marisuewrites at hubpages
- 1/2 C crumbled Panela Mexican cheese
- 10 corn tortillas (sprouted or home made if possible)
- 10 oz. cooked black beans
- 8 oz. frozen sweet corn
- 2 large sweet potatoes, peeled, and chunked small
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tbsp chilpotle chile powder
- 1 large roasted poblano chile, seeded, chopped
- vegetable broth as needed
- 2-3 serrano chiles, seeded chopped fine
- 1 jalapeno chile, seeded & chopped fine
- 2 cloves fresh garlic, chopped fine
- 1 green bell pepper, chopped fine (you can use colored bells for a slightly sweeter flavor)
- 1 large yellow onion, minced
- 1 Tbsp olive oil or canola oil
