In a large saucepan, melt butter over medium heat

  • 1/4 cup butter
  • 2 medium carrots, chopped (1 cup)
  • 2 stalks celery, sliced (1 cup)

  • 2 14-ounce cans chicken broth
  • 1/2 teaspoon ground white pepper
  • 1/4 teaspoon salt
  • 2 cups half-and-half, light cream or whole milk
  • 1/4 cup all-purpose flour
  • 1 1/2 cups cubed cooked chicken or turkey
  • 1 cup whipping cream
  • 1/2 of an 8- or 9-ounce package frozen artichoke hearts, thawed and cut into bite-size pieces
  • 1/2 of a 10-ounce package frozen chopped spinach, thawed and well-drained
  • 1 4 1/2-ounce round Brie or Camembert cheese, rind removed and cut up
