Linzer Sandwiches

Preheat the oven to 375 degrees
- 5 ounces unblanched hazelnuts (1 cup)
- 1/2 pound (2 sticks) unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 cups plus 2 tablespoons all-purpose flour, plus more for work surface
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon table salt
- Confectioners' sugar, for dusting
- 2/3 cup raspberry or cherry jam
Peach Panzanella

Cut baguette into thick cubes and toast in 400 degree oven for 10 mins or until lightly browned
- 1/2 French baguette
- 2 peaches, cut into wedges
- 1 avocado, chopped
- 1/4 red onion, thinly sliced

Honey-Soy Glazed Salmon

1. Heat oven to 450 degrees
- 1/2 cup honey, slightly heated
- 2 tablespoons reduced-sodium soy sauce
- 2 tablespoons jarred chopped garlic
- 1 tablespoon lime juice
- 4 salmon fillets (about 5 oz each)
- 2 cups cooked brown rice or Uncle Bens Ready Rice
- 2 scallions, sliced
- 1/2 cup cilantro, chopped
- Steamed snow peas (optional)
Salmon and Wild Rice Napoleon

1. Heat oven to 400 degrees
- 1 5 ounce bag Goose Valley Wild Rice (about 1 cup)
- 2 1/2 cups low-sodium chicken broth (such as Pacific)
- 1/2 cup dried cranberries
- 1/3 cup plus 2 tbsp pistachios, roughly chopped
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 4 ounces center-cut salmon fillets (1 lb total)
- 1/2 teaspoon celery salt
- 1/2 teaspoon ground mustard
- 1/4 teaspoon ground allspice
- Celery leaves, chopped (optional)
Pesto, Radish and Sea Salt Crostini

No-Bake Potato Casserole

- 2 c mashed potatoes
- 2 onions, thinly sliced and carmelized
- 1 bunch spinach, steamed ahd chopped
- 2 lean meat or vegetarian sausages
- Minced parsley
Stewed Green Beans and Tomatoes

1. Whisk together first 6 ingredients in a 6-qt
- 2 cups diced fresh tomatoes (about 3 medium)
- 1 cup coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon finely chopped fresh ginger
- 1 1/2 teaspoons kosher salt
- 2 garlic cloves, finely chopped
- 1 1/4 pounds fresh green beans, trimmed
- 1 tablespoon fresh lime juice
- Hot cooked long-grain rice
- 1/3 cup roasted salted peanuts, chopped
- 2 tablespoons chopped fresh cilantro (optional)
Original Chex Mix

1. Heat oven to 250. Melt butter in oven
- 6 T butter
- 2 T Worcestershire sauce
- 1 1/2 t seasoned salt
- 3/4 t garlic powder
- 1/2 t onion powder
- 3 c Corn Chex
- 3 c Rice Chex
- 3 c Wheat Chex
- 1 c mixed nuts
- 1 c pretzels
- 1 c garlic bagel chips
Easy Egg Bake

Grease 9x13 glass baking pan
- 8-9 slices white bread crusts cut off
- 8 eggs
- 3 1/2 c milk (not skim)
- 1 t salt
- 2 t dry mustard
- cubes of ham, turkey, sausage, whatever
- mushrooms, green pepper, onion, other veggies to taste
- salt and pepper
- 10 oz shredded cheddar cheese
