Indonesian Beef Curry

1. Coat slow cooker bowl with nonstick cooking spray
- 2 tablespoons vegetable oil
- 2 pounds beef chuck, cut into 2-inch chunks 1/2 teaspoon salt
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large onion, peeled and thinly sliced
- 3/4 pound small potatoes, about 2 inches in diameter, quartered
- 1/4 pound peeled baby carrots
- 1 can (13.6 ounces) light coconut milk
- 2 tablespoons curry powder
- 1 tablespoon reduced-sodium soy sauce
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 3 large pitas or flatbreads, cut into wedges
- Chopped parsley, low-fat plain yogurt and lime wedges (optional)
Honey Blondies

Preheat oven to 350 degrees
- 1 stick unsalted butter, plus more for pan
- 1 1/4 cups all-purpose flour, plus more for pan
- 1/3 cup honey
- 3/4 cup packed light-brown sugar
- 1 large egg, lightly beaten
- 2 teaspoons pure vanilla extract
- 1 teaspoon coarse salt
- 4 ounces bittersweet chocolate, cut into chunks
Apricots and Creme Fraiche

Fill each apricot half with a dollop of creme fraiche
- Just-ripe apricots, halved and pitted
- Creme fraiche
- Freshly ground pepper

Corn Crisps

In a large bowl combine the flour, salt, baking powder, cumin, sugar and cayenne
- 1/2 c flour
- 1 t kosher salt, plus more for sprinkling
- 3/4 t baking powder
- 1/2 t cumin
- 1/4 t sugar
- 1/4 t cayenne pepper
- 1 large egg
- 1/4 c milk
- 1 T unsalted butter, melted
- 1 1/2 c frozen corn kernels
- 1/4 c finely chopped scallions
- canola oil
Squash Casserole

Preheat oven to 350. Boil squash for 8 mins until crisp-tender
- 5-6 med zucchini, sliced in rounds
- 1 c Jalapeno jack cheese, grated
- 1/2 c bread crumbs
- 1 14.5 oz can stewed, chopped tomatoes
Mini Apple Crumbles

Preheat oven to 350. Lightly coat a 12-cup mini muffin pan with cooking spray and set aside
- CRUMBLE TOPPING:
- Cooking spray
- 1/2 c rolled oats
- 1/2 c whole wheat flour
- 1 t ground cinnamon
- Pinch kosher salt
- 1/3 c maple syrup
- 2 T cold, unsalted butter, cut into small pieces
- APPLE FILLING:
- 2 firm apples, peeled, cored and diced
- 2 T maple syrup
Mediterranean Pasta Salad

1. Place zucchini in a bowl
- 3 cups chopped zucchini
- 4 cups packed fresh baby spinach
- 2 cups cooked whole-wheat pasta (preferably a short shape, such as penne)
- 1 15-oz. can chickpeas, drained and rinsed
- 1 6.5-oz. jar marinated quartered artichoke hearts, not drained
- 1 2.5-oz. can sliced black olives, drained
- 1 large tomato, chopped
- 1 tablespoon chopped fresh basil
- 1 teaspoon chopped fresh oregano
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper
- 1/4 cup fresh goat cheese
Tex-Mex Beef Taco Stew

Coat slow cooker bowl with nonstick cooking spray
- 2 lbs beef chuck, cut into 1-in pieces
- 1 onion, sliced
- 2 cans (14 oz) diced tomatoes with jalapeno
- 1 packet (1 oz) reduced-sodium taco seasoning
- 1 can (15 1/2 oz) pinto beans, drained and rinsed
- 1 can (15 1/2-oz) kidney beans, drained and rinsed
- 1 pkg (10 oz) frozen corn, thawed
- Sour cream, sliced scallions and tortilla chips for garnish
Pistachios with a Kick

Preheat oven to 350. In a 9x9x2-in baking pan combine melted butter, coriander, salt, cloves and ground red pepper
- 2 T butter or margarine, melted
- 1 t ground coriander
- 1/2 t salt
- 1/4 t ground cloves
- 1/4 t ground red pepper
- 1 1/2 c shelled pistachio nuts
Berry-Nut French Toast

1. Coarsely crush the cereal and place in a shallow dish
- 2 cups multigrain flakes with oat clusters, cranberries, and almonds
- 4 eggs
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 3/4-inch-thick slices French or Italian bread
- 2 tablespoons butter
- Fruit-flavored syrup, maple syrup, or apricot preserves, warmed
