Szechuan Shrimp with Broccoli, Peppers & Mushrooms

Heat oil in med skillet over med-high heat
- 1 t sesame oil
- 3 green onions, thinly sliced
- 1 3/4 c shiitake mushrooms, stems removed and discarded, caps thinly sliced (1 c)
- 1 c broccolini florets or small broccoli florets
- 1 small red bell pepper, cut into thin strips
- 2 med cloves garlic, minced
- 1/4 lb fresh large raw shrimp, peeled and deveined, tails off
- 1 t ground Szechuan pepper
- 1/4 t red pepper flakes
- 1 2-in knob fresh ginger, peeled and grated
- 2 t low sodium tamari or soy sauce
- 1 1/2 oz cooked soba (buckwheat) noodles, brown rice or brown jasmine rice
- 2 t black sesame seeds
- Chopped fresh cilantro for garnish
Coconut-Lime Bread

1. Preheat oven to 350 degrees F
- 2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 cup coconut milk or milk
- 1/3 cup butter, melted
- 1 cup flaked coconut, toasted
- 3/4 cup lime marmalade, melted*
- 1 tablespoon lime marmalade, melted
- 1/4 cup chip or flake coconut, toasted
Sage Braid

- 1 large egg, well beaten
- Unsalted butter, room temperature, for plastic wrap and brushing
Pumpkin Quiche

1. Combine pumpkin, sausage, onion, and eggs
- 2 cups pumpkin puree
- 1 Package Morning Star Sausage Patties cooked and crumbled
- 1/4 cup finely chopped onion
- 2 large eggs
- 1 (13 ounce) can evaporated milk
- 2 tablespoons flour
- 1/2 cup grated parmesan cheese
- 1 10-inch pie shell, unbaked - OR - whole grain breadcrumbs
Kale and Avocado Salad with Dates

In a large bowl, toss together kale, pine nuts, oil, and lemon juice
- 1 bunch kale (about 12 ounces), preferably Tuscan, stems removed, leaves thinly sliced
- 1/4 cup pine nuts, lightly toasted
- 1/3 cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 2 ripe but firm avocados, halved, pitted, peeled, and cut into 1/4-inch slices
- 2 ounces Parmesan, shaved
- 8 large or 10 medium dry dates, such as deglet noor or amber, pitted and cut into slivers
- Coarse salt and freshly ground pepper

- 1 1/3 cups flour
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 cup cold butter, cut into 1/2-inch pieces
- 1/4 cup ice-cold water
- 2 tablespoons cold sour cream
- FILLING
- 5 large juicy apples, such as Fuji or Braeburn, peeled
- 2 teaspoons lemon juice
- 1/4 cup plus 1 tablespoon sugar
- 2 teaspoons cornstarch
- 1/4 teaspoon cinnamon
- 1/3 cup apricot preserves
- 1 1/2 tablespoons plain bread crumbs

Basil and Olive Potatoes

Add potatoes to a large pot and cover with cold water
- 2 pounds small new potatoes, quartered
- 1/3 cup canola oil
- 1 1/2 cups fresh basil leaves
- 3 cloves garlic, minced
- 1/3 cup white wine vinegar
- 2 tablespoons lemon juice
- 2 tablespoons mayonnaise
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 large yellow sweet peppers
- 1 cup green Castelvetrano olives or other green olives, pitted
Pizza Per Uno with Garlic, Spinach and Mozzarella

Preheat oven to 400. In a small bowl, combine tomato sauce, red pepper flakes and garlic; stir to mix well
- 1/2 c natural salt-free tomato sauce
- 1/4 to 1/2 t red pepper flakes, to taste
- 2-3 med cloves garlic, minced
- 2 whole wheat, sprouted wheat or gluten free pitas
- 1 c loosely packed spinach, finely chopped
- 2 oz fresh mozzarella, thinly sliced into rounds
- 2 T minced fresh basil leaves
Spinach-Stuffed Mushrooms

Preheat oven to 425. Lightly rinse mushrooms; pat dry with paper towels
- 24 large fresh mushrooms, 1 1/2 to 2 in in diameter
- 2 T olive oil
- 8 oz bulk hot Italian sausage
- 1/4 c finely chopped onion
- 1/4 c finely chopped red sweet pepper
- 1 clove garlic, minced
- 1 c fresh spinach, chopped
- 1/4 c finely shredded Parmesan cheese
- 1/4 c fine dry bread crumbs
Sweet Dutch Baby

1. Heat oven to 425. Peel and quarter the apples, then trim away the core
- 1 med. apple (we used half Granny Smith and half Golden Delicious)
- 3 T sugar
- 3/4 t cinnamon
- 2 T butter
- 3 large eggs at room temp
- 1/2 c milk at room temp
- 1/2 c flour
- 1/8 t salt
- 1/2 t vanilla extract
- Confectioners sugar for dusting
