Watermelon Coolers

1. In a saucepan, combine sugar and water
- 3/4 c sugar
- 3/4 c water
- 1 c fresh lime juice
- 3 c white rum
- 4 c seedless watermelon chunks (1/4 of a watermelon)
- 8 c crushed ice
- Watermelon spears and mint sprigs for garnish
Healthy Pumpkin Muffins

1. Preheat oven to 350 degrees
- 2/3 cup pumpkin puree
- 1/2 cup maple syrup, honey, agave or brown sugar
- 1/2 cup coconut oil, melted
- 6 eggs, whisked
- 2 teaspoon vanilla extract
- 1/2 cup coconut flour
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon powdered ginger
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- pinch of salt
- 1/2 cup mini chocolate chips or nuts of choice (optional)
Caramel Pull-Aparts

1. Spray bundt pan. Cut Rhodes rolls in half and roll in dry pudding mix
- 24 Rhodes rolls, thawed but still cold
- 1 pkg. non-instant butterscotch pudding
- 2 tbsp. cinnamon
- 1/2 c. brown sugar
- 1/2 to 1 c. chopped pecans
- 1 stick melted butter
Carrot-Ginger Soup

In a pot over medium heat, cook shallots and ginger in coconut oil until fragrant, 2 minutes
- 1/4 cup minced shallots
- 4 teaspoons minced ginger
- 2 tablespoons coconut oil
- 1 pound carrots, peeled and chopped
- 1 medium sweet potato, peeled and chopped
- 4 cups water
- Coarse salt
- Yogurt
Pumpkin Streusel Tart

Heat oven to 350. With cooking spray, coat an 11-in round tart pan (use one with a removable bottom)
- crust:
- 1 1/4 c flour
- 1/2 c walnuts
- 1 T sugar
- 1/2 t salt
- 1 stick cold butter, cut into pieces
- 4 oz cream cheese
- streusel topping:
- 1/4 c rolled oats
- 3 T flour
- 2 T packed brown sugar
- 2 T chopped walnuts
- 2 T cold butter, cut into small pieces
- filling:
- 1 15-oz can solid-pack pumpkin
- 1 14 oz can sweetened condensed milk
- 1 t ground cinnamon
- 2 large eggs
Ginger "Beer Can" Chicken

Ginger ale is used in place of beer in this tasty grilled 'beer-can' chicken
- GINGER ALE GLAZE:
- 1 (13- x 9-inch) disposable aluminum baking pan
- 2 tablespoons kosher salt
- 2 teaspoons paprika
- 2 teaspoons sugar
- 1 teaspoon black pepper
- 3/4 teaspoon ground ginger
- 1/2 teaspoon ground red pepper
- 2 (3 1/2- to 4-pound) whole chickens
- 2 (12-ounce) cans ginger ale
- 2 cups ginger ale or ginger beer
- 2 tablespoons light brown sugar
- 2 teaspoons fresh ginger, grated
- 1/8 teaspoon ground red pepper

In a small pitcher, stir together orange juice, lemon juice, dark rum, and gin
- 1/3 cup chilled fresh orange juice
- 2 tablespoons fresh lemon juice
- 1 ounce dark rum
- 1 ounce gin
- 1/4 cup sliced hulled strawberries
- 3/4 cup chopped, peeled, and pitted peaches
- 9 small fresh mint leaves
Vietnamese Peanut Sauce

Sauté garlic in oil in a small saucepan over medium heat 1 to 2 minutes or until golden
- 3 large garlic cloves, finely chopped
- 1 tablespoon vegetable oil
- 1/3 cup fish sauce
- 1/3 cup firmly packed light brown sugar
- 2 to 3 tsp. Asian chili-garlic sauce
- 3 tablespoons finely chopped toasted peanuts
- 1/4 cup torn cilantro and mint leaves
Squash and Lentil Stew

1. Heat oil in a large stockpot or Dutch oven over medium heat
- 3 tablespoons olive oil
- 3 carrots, peeled and diced
- 2 ribs celery, trimmed and diced
- 1 medium onion, diced
- 1 medium butternut squash (about 2 3/4 lbs), peeled, seeded and diced (5 1/2 cups)
- 2 tablespoons chili powder
- 1/2 teaspoon ground cumin
- 1 14 1/2 ounce can light and fat-free chicken broth or low-sodium vegetable broth
- 1 14 1/2 ounce can diced tomatoes in juice
- 1 1/2 cups small brown or French green lentils, picked through
- 3/4 teaspoon salt
- 1/3 cup cilantro leaves, chopped
Tomato Ombre on Grilled Rustic Bread
