Zucchini boats

# Place zucchini into boiling water for about 3-5 minutes
- 1 zucchini (about 20 cm long)
- some lemon pepper
- 0.5 tbsp butter
- 1 small onion, chopped
- 125 g frozen or canned corn
- 1 garlic glove, crushed
- 0.5 tsp pepper
- 150 g blue cheese
- 3 tbsp chopped parsley
White Sangria

1. Combine first 3 ingredients in a large pitcher; stir to dissolve sugar
- 1/3 * 1/3 cup brandy
- 1/3 * 1/3 cup peach schnapps
- 1 1/2 * 1 1/2 tablespoons sugar
- 2 * 2 (750-milliliter) bottles white Rioja wine, chilled
- 1 * 1 lemon, thinly sliced
- 1 * 1 small navel orange, quartered and sliced
- 1 * 1 green apple, cored and sliced
- 1 * 1 ripe peach, peeled and sliced
- 1 * 1 (12-ounce) bottle sparkling water, chilled
Chicken with Blue Cheese Slaw

This is great for a hot summer day
- Dressing:
- 2 c Rotiss.Chix
- 2 c Red grapes, halved
- 1 c Shredded Carrots
- 1/2 c Red onion -chopped
- 10 oz bag Broccoli Slaw
- 1/4 c Rice Vin
- 1/4 c Chix broth
- 1/4 c OJ concentrate, thawed
- 2 tsp Olive oil
- S&P
- Blue Cheese to hearts content
Roasted Asparagus w/ Orange Vin.

This viniagrette is good with other veggies too, such as squash & zucchini
- 1/3 tb Orange rind & juice
- 2 tb Shallots finely chopped
- 1 tsp Sugar
- S&P
- 3 lbs Asparagus
- 2 tb Olive oil
Roasted Asparagus with Balsamic

- 40 Spears
- 1/4 tsp Kosher Salt
- 1/8 tsp Pepper
- 2 tb Butter
- 2 tb Soy Sauce
- 1 tsp Balsamic Vin
- Cracked black pepper
- Lemon rind - grated
Spinach Salad with Maple-Dijon Vinaigrette

1. Combine first 8 ingredients in a large bowl, stirring with a whisk
- 1/4 * 1/4 cup maple syrup
- 3 * 3 tablespoons minced shallots (about 1 medium)
- 2 * 2 tablespoons red wine vinegar
- 1 * 1 tablespoon canola oil
- 1 * 1 tablespoon country-style Dijon mustard
- 1/4 * 1/4 teaspoon salt
- 1/4 * 1/4 teaspoon freshly ground black pepper
- 1 * 1 garlic clove, minced
- 1 * 1 cup sliced mushrooms
- 1/2 * 1/2 cup vertically sliced red onion
- 1/2 * 1/2 cup chopped Braeburn apple
- 4 * 4 bacon slices, cooked and crumbled
- 1 * 1 (10-ounce) package fresh spinach

- 1/2 c Blue Cheese
- 1/4 c Chives
- 2 tb Butter

- 4 slices Bacon- cooked & crumbled
ChaCha's Salsa

If you eat a bite, everyone you talk to for the rest of the day must have some too
- 4 large Tomato
- 1/2 Red onion
- (if making more it's 2:1/4 tom:onion)
- 1 tsp Sea Salt
- 1 tb Garlic Salt
- 1 tb Black pepper
- 1 Heaping spoonful Minced Garlic
- Cilantro to taste
- 1 lrg Jap
- 1 tb jap juice from jar
- 1 tb Lime juice
- 1 tb Vin

- 10.1 * 10.1 ounces all-purpose flour (about 2 1/4 cups)
