Curried Pork

Tangy Mustard Coleslaw

- Dressing:
- 1/4 c Maple Syrup
- 3 tb Cider Vin
- 1 tb Extra Virgin Olive Oil
- 1 tb Dijon Mstrd
- S&P
- Salad:
- 1 can Great Northern Bean rinse & drain
- 1/2 c Green Onion sliced thin
- 1/2 c Red Bell Pepper finely chopped
- 5 Bacon slices, cooked & crumbled
- 2 pkgs Fresh Baby Spinach

- 1/4 * 1/4 teaspoon freshly ground black pepper
- 1/4 * 1/4 teaspoon grated lemon rind
- 1 1/2 * 1 1/2 pounds small red potatoes, quartered
- 1 * 1 medium onion, cut into 1/4-inch-thick wedges (about 8 ounces)

- 2 * 2 cups cherry tomatoes, halved
- 12 * 12 pitted ripe olives, drained and halved (about 1/3 cup)
