Barack Obama's Chili

I used a 6 quart Smart Pot for Obama's chili
- 1 can kidney beans (and the goop!)
- 1 lb lean ground meat (I used ground chicken)
- 1 green bell pepper, chopped
- 1 large onion, chopped
- (I added red bell pepper--maybe 1/2 of 1 medium)
- 5-6 medium tomatoes, chopped (include seeds and all)
- 4 chopped cloves of garlic
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp basil
- 1 tsp turmeric
- 2 tsp chili powder
- 1 tsp salt
- 3 T red wine vinegar
- Rice!
Chocolate Mousse

Prepare pudding using 2 1/4 cups milk
- 1 4 ounce box chocolate pudding
- 2 1/4 cups milk
- 6 squares semi sweet chocolate
- 1 teaspoon vanilla
Mexican Fondue Recipe

In a small bowl, combine the corn, tomatoes, green chilies and chili powder
- 1 can (14-3/4 ounces) cream-style corn
- 1 can (14-1/2 ounces) diced tomatoes, drained
- 3 tablespoons chopped green chilies
- 1 teaspoon chili powder
- 1 package (16 ounces) process cheese (Velveeta), cubed
- French bread cubes
Key Lime Pie Low Fat

Whisk milk, yogurt, limejuice and zest
- 1 9” graham cracker crust 2 teaspoons lime zest
- 1 14 ounce condensed milk 1/4 cup water
- 2/3 cup nonfat plain yogurt 1 packet gelatin
- 2/3 cup key lime juice (bottled is great)
Creamy Pasta Shells with Broccoli and Ham

- Salt and pepper
- 1 pound small pasta shells
- 4 cups small broccoli florets (from 1 medium head broccoli)
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 4 ounces cooked ham, chopped
- 3/4 cup heavy cream, warmed
- 1/2 cup grated Parmesan
SPANISH RICE SALAD

In a large bowl, combine all salad ingredients; mix well
- Salad:
- 2 cups cooked white rice
- 1/2 cup chopped red onion
- 4 oz. (1 cup) shredded cheddar cheese
- 2 11-oz. mexicorn drained
- 1/2 cup chopped green pepper
- Dressing:
- 3/4 cup Old El Paso Thick salsa
- 1/2 cup sour cream
- 1/2-3/4 teaspoon salt (or to taste)
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Chopped cilantro (2 tablespoons to 1/4 cup)

Spaghetti Alla Carbonara

Cook the spaghetti in a large pot of boiling salted water until it is tender but still firm
- 3/4 pound spaghetti 4 slices bacon, cooked and crumbled
- 1/2 cup chicken broth Salt and freshly ground pepper to taste
- 2 Tablespoons dry white wine 3/4 cup freshly grated Parmesan Cheese
- 1 garlic clove, minced 2 egg yolks
- 8 Tablespoons butter
Pumpkin Bars

Cream together butter and sugar
- Glaze:
- 1 /4 pound margarine or butter
- 1 cup firmly packed brown sugar
- 1 egg
- 1/2 cup canned pumpkin
- 1 1/2 cup flour
- 1 teaspoon cinnamon
- 1/2 teaspoon each of finer, allspice and baking soda
- 1/2 cup chopped nuts
- 1/2 cup raisins or dates
- 1 cup powdered sugar
- 3 teaspoons orange juice.
- 1 teaspoon grated orange peel.
Potato Gratin from Lo

Put everything except cheese in a saucepan and simmer for 10 minutes
- 8 cups russets peeled and cut into chunks (about 2.5 pounds)
- 1 1/2 cups milk
- 1 1/2 cups heavy cream
- 1/2 cups white onions sliced
- 1 T. garlic minced
- Salt, pepper & nutmeg to taste
- 1 cup shredded Swiss Cheese
