Homemade Schnapps (Peppermint or Spearmint) Recipe

Directions: Cook water & sugar on low until clear (about ½ hour); add everclear and extract
- 10 cups water
- 6 cups sugar
- 1 1/2 pints of 190 proof alcohol (everclear)
- 1 oz of peppermint or spearmint extract.
Bourbon-Soaked Cherries

- 1 cup bourbon
- 2/3 cup sugar
- 1/4 cup fresh orange juice
- 1 1-inch strip orange peel
- 1 1/2 teaspoon vanilla extract
- 1/2 pound cherries, pitted
Meatball in a Tomato

Preheat oven to 350°F. Soak bread in milk
- 1 1/2 cups diced bread
- 1/2 About 1/2 cup milk, to soften bread
- 4 large beefsteak tomatoes
- Salt and pepper
- 3 tablespoons olive oil plus a drizzle
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon fennel seed
- 3/4 pound ground beef, pork and veal mix

- A few grates nutmeg
- 1/4 cup grated onion
- 2 to 3 large cloves garlic, finely chopped or grated
- 1/2 cup loose packed flat leaf parsley, chopped
- 1/2 cup freshly grated Parmigiano-Reggiano cheese, divided
- 1 large egg
- 1/2 cup Panko or large homemade breadcrumbs
- 1 pint grape or small cherry tomatoes, quartered
- 1/2 pound ball fresh mozzarella, cut into small dice
- 12 leaves fresh basil, rolled and very thinly sliced

- 8 oz mixed candied citrus peel
- 1/2 cup brandy
- 1 lb butter

- 1 cup all-purpose flour, sifted
- Pinch of salt
- 3 cups fresh bread crumbs
- 1/4 teaspoon grated fresh nutmeg
- 1 tablespoon ground cinnamon
- 2 teaspoons ground mace or allspice
