Sparkling Peppermint Cookies

Combine 3/4 C sugar, butter, egg, vanilla & peppermint flavor in bowl
- 3/4 C Sugar
- 1/2 C Butter (softened)
- 1 Egg
- 1/2 tsp Vanilla
- 1/8 tsp Peppermint Flavoring
- 1 2/3 C Flour
- 1 tsp Cream of Tartar
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 C Sugar
Pork Tenderloin

Note: I keep a mixture of the Rosemary, Sage, Salt & Pepper to use whenever I make Pork Tenderloin
- 2 pork tenderloins (3/4 lb ea)
- 1 T Olive Oil
- 2 t dried Rosemary, crushed
- 1 t rubbed Sage
- 1/2 t Salt
- 1/4 t Pepper
- Optional : Bake with quartered Red Potatoes, Carrots and 1 medium Onion, cut into wedges.

Kahlua Cake

Put all ingredients except chocolate chips in large bowl and mix well
- 1 Box Chocolate Cake Mix
- 1 pint sour cream
- 1 6 ounce pkg chocolate chips
- 4 eggs
- 1 small pkg instant vanilla pudding
- 1/2 C vegetable oil
- 1/3 C Kahlua (or French Vanilla Kahlua)
Banana Bread

- 3 Bananas
- 2 Eggs
- 1/4 C Oil
- 2 C Flour
- 2 C Sugar
- 2 tsp Baking Powder
- 1 C Nuts
Braised Pork Chops (low sodium)

1 Chop w/ 2 T gravy = 180 calories (83 mg sodium)
- 1/2 tsp dried marjoram
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- 1/8 tsp pepper
- 4 bone-in pork loin chops (6 oz, 3/4 in thick)
- 1 tsp olive (or canola) oil
- 1/2 C water
- 2 tsp cornstarch
- 1/4 C reduced sodium chicken broth
Marinara Sauce

Heat oil in large saucepan over medium heat
- 2 T Olive Oil
- 3 Cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (28oz) can tomato puree
- 2 1/2 T dried Oregano
- 2 1/2 T dried Parsley
- 3/4 Cup shredded Kraft Parmesan, Romano and Asiago Cheeses (or sub 1/4 C grated Romano and 1/3 C grated Parmesan Cheese)
- 2 Bay Leaves
- 1 t onion powder
Baked Potato Soup

In large kettle or Dutch Oven, melt butter
- 2/3 C Butter or Margarine
- 1/2 C Flour
- 7 C Milk
- 4 Large baking potatoes (peel, boil, cool, cube) 4 Cups (or bake, peel, cool, cube)
- 4 Green Onions chopped
- 12 Bacon Slices (cooked & crumbled) u can use less
- 1 1/4 C shredded Cheddar Cheese
- 1 C Sour Cream
- 3/4 tsp Salt
- 1/2 tsp Pepper
Baked Mash Potatoes

Directions Preheat the oven to 400 degrees F
- Ingredients
- 4 pounds russet potatoes, peeled, cut into 1-inch pieces
- 1 stick butter, melted plus 1 tablespoon at room temp
- 1 cup whole milk, at room temperature
- 1 1/2 cups shredded mozzarella
- 1 cup freshly grated Parmesan, divided use
- 8 oz pancetta, diced, cooked and drained of excess oil
- Salt and freshly ground black pepper
- 1/4 chopped fresh flat leaf Italian parsley
- 2 tablespoons plain dry bread crumbs
