Roasted Pepper Pasta Salad

Boil pasta until tender and wash and chill
- 1 c. cooked turkey (cubed)
- 1/4 c. shredded parmesan cheese
- 1/4 c. shredded asiago cheese
- 1/4 c. shredded romano cheese
- 15 cherry tomatoes
- basil
- salt
- pepper
- juice of 1 lemon
- 3 peppers (red, yellow, green)
- olive oil
- balsamic vinegar
- 1 bag spiral pasta
Crunchy Spring Rolls

In skillet, cook slaw, peppers and scallions in oil until peppers are tender
- 1 bag broccoli slaw mix
- 1/2 c. red peppers (diced)
- 1/4 c scallions (chopped)
- 2 T oil
- 2 tsp. gingerroot
- 2 tsp. garlic (chopped)
- 16 spring roll wrappers
- 3 T Teriyaki sauce
- Oil for frying
- 1/2 c duck sauce
Artichoke Dip

Drain artichokes and chop or mash
- 1 6-7.5 jar artichoke hearts
- 1/2 cup Parmesan cheese
- 1/2 cup mayo
- 1/4 tsp. minced garlic (1 clove)
Parmesan Roasted Potatoes

Cut potatoes into 3/4 inch cubes
- 4-5 cups cubed potatoes, Red Skin or Yukon Gold are best.
- 3 Tbsp olive or canola oil
- 1/2 tsp garlic salt
- 1/2 tsp salt. I like to use sea salt or kosher
- 1 tsp smoked paprika
- 1/2 tsp pepper
- 4 Tbsp freshly grated Parmesan Cheese
Sweet and Sour Veggie Salad

In saucepot, cook broccoli and snow peas in salted water 2 minutes
- 1 head broccoli, cut into florets (1 buy package of florets) 2 c.
- 1/4 lb. snow peas, trimmed
- 1 red onion (peeled and chopped)
- 1 red pepper (seeded and cubed)
- 1 14 oz. can baby corn (drained)
- 1/2 c. shredded carrots
- 1/2 c unseasoned rice vinegar
- 2 T sugar
- 2 T corn syrup
- 1/4 tsp. red pepper flakes
- 1 T toasted sesame seeds
White Chili Bean Queso

Combine cream cheese and tomatoes in a microwave bowl and place in microwave for 1 minute
- 2 cans white chili beans (undrained)
- 1 8 oz. cream cheese
- 1 can Rotel tomatoes w/green chiles (drained)
- 1/2 c white onion
- salt to taste
- 1 bag tortilla chips
Vinegar Chocolate Cake

Bake at 350 degrees for 30 minutes
- 1 1/2 c flour
- 1 c sugar
- 1/2 tsp salt
- 1 tsp baking soda
- 3 T cocoa
- 5 T oil
- 1 c water
- 1 T vinegar
Macaroons

Mix coconut, flour and salt
- 2 1/2 cups coconut
- 1/3 cup flour
- 1/8 tsp. salt
- 2/3 cup condensed milk
- 1 tsp. vanilla
Mexican Fiesta Biscuit Bake

Heat oven to 375 degrees. Melt butter in 13 x 9 baking dish and coat pan evenly
- 2 T butter
- 1 can (16.3 oz.) can of refrigerated buttermilk biscuits
- 1 can (10.2 oz.) can of refrigerated buttermilk biscuits
- 1 jar salsa (1 3/4 c)
- 3 c Monterey Jack cheese(shredded)
- 1/2 c green pepper
- 1/2 c green onions
- 1 can sliced ripe olives (drained)
Whiskey Balls

- 3 c. ground vanilla wafers
- 1 c. ground pecans
- 1 c. sugar
- 3 T light corn syrup
- 1 1/2 T cocoa
- 1/2 c. bourbon
