- 1 small can evaporated milk (5 oz.)

- 1 1/2 lbs. boneless chicken breasts

- 1/2 c chopped yellow onion
- 1 T chopped garlic
- 1 c chicken broth
- 1 package garlic and herb sauce mix (Knorr)
- 1/12 c milk (can use low fat)
- 1/4 tsp. red pepper flakes
- 1 T lemon juice
- 1 T basil
- 1 T parsley
- 1 lb. angel hair pasta(cooked)

TACO SOUP

Brown ground beef in large soup pot with salt, pepper, chopped onion and garlic powder
- 2 lbs lean ground beef
- 1 medium yellow onion, chopped
- 2 15 oz cans stewed tomatoes - regular
- 1 10 oz can rotel tomatoes
- 1 14 oz can pinto beans
- 1 14 oz can ranch style beans
- 1 14 oz can corn kernels
- 2 cups chicken or vegetable broth
- 1 cup water
Creamy Chicken Enchilada Roll-Ups

Using an electric mixer beat together cream cheese, shredded cheese, garlic, and taco seasoning until well blended
- 2-8 ox packages cream cheese, softened
- 1 1/2 c shredded Mexican cheese blend
- 1 tsp garlic, minced
- 2 tbsp taco seasoning
- 10 oz can Rotel tomatoes and chilies, drained
- rotisserie chicken, skinned and chopped
- 1/2 c cilantro, chopped
- 4 green onions, chopped
- 4.25 oz chopped black olives
- 1 package burrito sized tortillas

- 2 lbs. sweet potatoes (peeled if desired)

Dissolve Jello in water and lemon juice, and cool
- 1 small package lemon Jello
- 1 c. boiling water
- 3 T lemon juice
- 1 8 oz. cream cheese (softened)
- 1 c. sugar
- 1 tsp. vanilla
- 1 can Milnot (whipped)
- 3 c. crushed graham crackers
- 1/2 c. melted butter

- 1 c. diced celery
