Roasted Pepper Pasta Salad

Ingredients

  • 1 c. cooked turkey (cubed)
  • 1/4 c. shredded parmesan cheese
  • 1/4 c. shredded asiago cheese
  • 1/4 c. shredded romano cheese
  • 15 cherry tomatoes
  • basil
  • salt
  • pepper
  • juice of 1 lemon
  • 3 peppers (red, yellow, green)
  • olive oil
  • balsamic vinegar
  • 1 bag spiral pasta

Preparation

Step 1

Boil pasta until tender and wash and chill. Add splash of olive oil and mi to prevent pasta from sticking. Grill peppers until skin blisters and blackens. Place in bowl and cover. Let sit for 15 minutes. Remove skin and seeds. Slice peppers into strips and add to pasta. Add turkey. Cut tomatoes into quarters and add to pasta. Add cheeses, lemon juice and 1 tsp. basil. Add oil as necessary to keep salad from being too dry. Add 1-2 T of balsamic vinegar. Salt and pepper to taste. Chill until ready to serve.


NOTE: can add ham and black olives instead of turkey.
