Heat the oil in a 4-quart saucepan over medium-high heat
- 1 tablespoon vegetable oil
- 1 medium carrot, peeled and cut into 2-inch matchstick-thin strips (about 1/2 cup)
- 1 medium red pepper, cut into 2-inch matchstick-thin strips (about 1 1/2 cups)
- 1 cup sliced mushrooms (shiitake, oyster, cremini)
- 1 carton (32 ounces) Swanson® Thai Ginger Flavor Infused Broth
- 2 cups shredded cooked chicken
- 1 can (about 14 ounces) unsweetened coconut milk
- 2 tablespoons lime juice
- 2 tablespoons chopped fresh cilantro leaves

.Prepare rice according to package instructions to yield 4 cups cooked rice
- Method :
- 4 cups rice, prepared (use brown rice)
- 1/2 pound boneless, skinless chicken breasts, cooked or shrimp cooked
- 1 cup peas & carrots, frozen
- 1 white onion, chopped
- 2 cloves garlic, minced
- 2 eggs
- 3 tablespoons sesame oil
- 1/4 cup soy sauce (I use Braggs)
