Barbecued Chicken Pizza

1) Cut the chicken into 2" pieces
- Dough
- your favorite pizza crust recipe, using about 3 cups of flour and prepared through its first rise
- Topping
- 1 tablespoon olive oil
- 2 cloves garlic, peeled and chopped
- 1 1/2 to 2 pounds boneless chicken, breasts or thighs, cut into 1" pieces (or use leftover roast chicken)
- 1 1/2 cups prepared barbecue sauce
- 2 1/2 cups red onions, chopped in large pieces; about 2 medium-large onions
- salt and pepper to taste
- 2 cups shredded mozzarella cheese

Preheat oven to 350 degree F
- 1 tablespoon dried parsley
- 1 tablespoon dried chives
- 1/2 teaspoon garlic powder
- 6 boneless, skinless chicken breast halves (1 to 1-1/2 pounds total), pounded to 1/4-inch thickness

- 1/2 teaspoon black pepper

Place the olive oil into a large 6-quart Dutch oven and set over medium heat

- 1 cup finely chopped onion
- 1/2 cup finely chopped carrot
- 1/2 cup finely chopped celery

- 1 pound lentils, picked and rinsed

Combine first 7 ingredients in a large bowl and set aside
- Glaze:
- 1 3/4 c flour
- 1/2 c sugar
- 1 Tbs
- lemon peel
- 1 tsp baking powder
- 3/4 tsp baking soda

- 6 Tbs melted and cooled butter

- 1 (29 ounce) can peach slices, undrained
- 1 (20 ounce) can pineapple chunks, undrained
- 1 (3 1/8 ounce) box dry vanilla instant pudding mix
- 1 lb strawberry, stemmed and quartered
- 1 banana, sliced
- 1/2 pint blueberries
- 1 bunch grapes (I use the red ones)
