- 1 medium onion, peeled and diced (5 ounces, 1 cup)
- 2 tablespoons (1 ounce) butter or vegetable oil

- 1 pound (2 cups) ricotta cheese
- 1/2 teaspoon salt
- 3 large eggs, beaten
- 1 (10-ounce) box frozen chopped spinach, thawed and thoroughly wrung dry*
