- 1 cup wood chips, preferably hickory, soaked for 15 minutes
- 3 tablespoons minced red onion
- 2 tablespoons chopped fresh cilantro leaves
- 1 teaspoon table salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon sugar (see note above)
