One Pot Beef Stroganoff - all the delicious flavors you love about this classic comfort food made easier in just ON
- 1 1 1 tablespoon olive oil
- 3/4 3/4 3/4 lbs steak, cut into thin slices (I used flank)
- to and freshly cracked black pepper, to taste
- 1 1 3 tablespoon + 3 tablespoons all purpose flour, divided
- 1 1 1 cup cremini or white button mushrooms, sliced
- 1 1 1 small onion, diced
- 2 2 2 cloves garlic, minced
- 3 3 3 tablespoons unsalted butter
- 3 3 3 tablespoons flour
- 3 1/2 3 1/2 1/2 cups reduced sodium beef broth (plus more as needed)
- 3 3 3 tablespoons red wine vinegar
- 3 3 3 tablespoons Worcestershire sauce
- 1 1 1 tablespoon dried thyme
- 6 6 6 ounces dried wide egg noodles
- 4 4 4 ounces cream cheese, softened (optional but recommended for an extra creamy sauce)
- 1/2 1/2 1/2 cup sour cream (I used full fat)
- freshly chopped parsley, for garnish

- 1 cup oil-packed sun-dried tomatoes (one 8 1/2 ounce jar), drained, rinsed, patted dry, and chopped very coarse
- 6 tablespoons extra-virgin olive oil
- 1/4 cup walnuts, toasted in small dry skillet over medium heat until fragrant, about 6 minutes
- 1 small clove garlic, minced or pressed through garlic press (about 1/2 teaspoon)
- 3/4 ounce grated Parmesan cheese (1/2 cup)
- Salt and ground black pepper
- 1 pound campanelli or farfalle
- 1 medium bunch arugula (about 10 ounces), washed, dried, stemmed, and cut into 1-inch lengths (about 6 cups)
