- 1 1/2 c. (3 sticks) butter, softened
- 1 (8-oz.) block cream cheese
- 3 c. sugar
- 5 large eggs
- 3 tbsp. lime juice
- 3 c. all-purpose flour
- Zest of 1 lime
- FOR THE GLAZE
- 1 c. powdered sugar
- 1 tsp. lime juice
- 2 tbsp. water
- 1/2 tsp. pure vanilla extract
- Zest of 1 lime

- 1/2 to 1 cup light or dark brown sugar, packed

- grated peel of 1 orange
- 1 cup uncooked rolled oats, regular or old-fashioned
- 2 cups light or medium rye flour
- 9 to 10 cups bread flour or unbleached all-purpose flour
- warm molasses or dark coryn syrup to brush hot loaves
