If using a tart apple, add up to 1 tablespoon brown sugar
- Dressing
- 1 apple (about 7 ounces), unpeeled, quartered, cored, and cut into 1-inch cubes
- 2 tablespoons cider vinegar
- 1 teaspoon hot pepper sauce, such as Tabasco
- 1 scallion, chopped coarse
- 1/4 cup fresh parsley leaves
- 3/4 teaspoon table salt
- 1/8 teaspoon ground black pepper
- 2 - 3 tablespoons water
- 1/2 cup vegetable oil
- Greens
- 2 quarts mixed greens, washed and dried; suggestions include arugula and watercress

- Herbed Baked Goat Cheese
- 3 ounces Melba toasts, white (about 2 cups)
- 1 teaspoon ground black pepper
- 3 large eggs
- 2 tablespoons Dijon mustard
- 1 tablespoon minced fresh thyme leaves
- 1 tablespoon chopped fresh chives
- 12 ounces goat cheese, firm
- Extra-virgin olive oil
- Vinaigrette and Salad
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon minced shallot
- 1/4 teaspoon table salt
- 6 tablespoons extra-virgin olive oil
- Ground black pepper
- 14 cups hearty greens (mixed), washed and dried
Maple-Pecan Shortbread

Preheat the oven to 350°
- 1 1/4 cups cake flour
- 1/4 cup cornstarch
- 1/4 tsp. salt
- 1 stick unsalted butter, softened
- 2 Tbsp. brown sugar
- minced zest of 1/2 of an orange
- 1/4 cup pure maple syrup
- 1/2 tsp. maple extract
- 1/4 cup pecans, toasted, chopped
- ultrafine sugar

- Glaze:
- 2 cups + 2 Tbsp (300g) all-purpose flour*
- 1/4 tsp salt
- 1 cup (226g) unsalted butter, cold and diced into 1 Tbsp pieces
- 2/3 cup (140g) granulated sugar
- 1/2 tsp almond extract
- 1/2 cup raspberry jam , seedless if preferred
- 1 cup (124g) powdered sugar
- 1 tsp almond extract
- 2 - 4 tsp water

- Dough:
- 3 1/2 cups King Arthur Unbleached All-Purpose Flour (14 3/4 ounces)
- 2 tablespoons potato flour or 1/4 cup instant mashed potato flakes (3/4 oz)
- 1 1/3 cup lukewarm milk (10 5/8 oz)
- 2 tablespoons unsalted butter, softened
- 1 teaspoon salt
- 2 teaspoons instant yeast
- Filling:
- 12 ounces uncooked bacon, cooked and chopped in 1/2" pieces (about 3 1/2 ounces cooked)
- 2 cups grated cheddar cheese
- 2 tablespoons finely chopped chives
