Danish Recipe #2 - Danish Envelopes (Konvolute)

Envelopes may be made as a large pastry that can be cut up for serving or as individual pastries
- FILLING AND DECORATION:
- 1 recipe Classic Danish Pastry or Quick MEthod
- 1 cup raspberry or apricot preserves
- 1/2 cup almond paste
- 1 slightly beaten egg

- 1 shallot, minced

Pan-Roasted Asparagus with warm Orange-Almond Vinaigrette

This recipe works best with asparagus that is at least 1/2 inch thick near the base
- 2 tablespoons olive oil
- 1/4 cup slivered almonds
- 1/2 cup fresh squeezed orange juice
