Here's a gussied-up version of a thumbprint cookie
- DOUGH
- 2 cups all-purpose flour
- 1 1/2 ounces shelled raw pistachios
- 3/4 cup sugar
- 1/8 teaspoon salt
- 2 sticks unsalted butter, chilled
- 1 large egg
- 1/4 teaspoon lemon extract
- 1/4 teaspoon almond extract
- FILLING
- 6 tablespoons unsalted butter
- 4 ounces white chocolate, finely chopped
- 4 ounces raw, shelled pistachios, finely chopped
- 3 ounces (about 6 large whole) dried apricots, finely chopped and mixed with pistachios
