Big Mac Casserole

About 350 calories per serving
- 1 cup onion, chopped small
- 5 dill pickle spears, chopped small
- 1 1/2 lbs. 96% lean ground beef or ground turkey (I used hamburger)
- 9 slices 2% slices american cheese (I used Kraft)
- 1 roll reduced fat crescent roll dough
- shredded iceberg lettuce
- 1-2 T. per serving light Thousand Island Dressing (I made my own with low fat Hellman's mayo, Red Gold ketchup & sweet relish)
Cauliflower Cheese Sticks

Chop cauliflower in food processor until it's "rice" texture
- 1 lg. head cauliflower
- 2 eggs
- 3 c. cheese (your choice)
- 1 T. dried basil
- 2 T. Italian seasoning
- Salt & pepper to taste
Cheesy Broiled Flounder

- 1/2 c. grated Parmesan
- 1/4 c. butter, softened
- 3 T. mayo

This cake is SO good! This will be a go to dessert as it can be made with different kinds of fruit!
- 1 box Pillsbury sugar free yellow cake mix, prepared according to package directions or use 4 egg whites, unsweetened applesauce (oil) and half water/half pineapple juice (water)
- 1 (8-ounce) container of sugar free cool whip
- 1 (20-ounce) can crushed pineapple in juice (undrained)
