- Poppy seed sauce:
- 24 white dinner rolls
- 24 pieces honey ham
- 24 small slices Swiss cheese
- 1/3 cup mayonnaise
- 1/3 cup miracle whip
- 1 Tablespoon poppyseeds
- 1 1/2 Tablespoons yellow mustard
- 1/2 cup butter, melted
- 1 Tablespoon minced onion
- 1/2 teaspoon Worcestershire sauce

- 1 1/2 cups/250 g all-purpose flour

Italian White Bean and Spinach Soup

- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 1 stalk celery, chopped
- 1 garlic clove, finely chopped
- white kidney beans, rinsed and drained (cannellini)
- 2 cups water
- 1 (14 1/2 ounce) can chicken broth
- 1/2 teaspoon fresh coarse ground black pepper
- 1 teaspoon dried thyme
- 10 -12 ounces spinach, tough stems trimmed
- 1 tablespoon fresh lemon juice
- freshly grated parmesan cheese (optional)

Zucchini Parmesan Crisps

Easy to make zucchini parmesan crisps
- 1 pound zucchini or squash (about 2 medium-sized)
- 1/4 cup shredded parmesan (heaping)
- 1/4 cup Panko breadcrumbs (heaping)
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
- freshly ground pepper, to taste
Tofu Scramble

Place tofu on a plate lined with several layers of paper towels (to absorb liquid)
- 14-ounce blocks extra-firm tofu
- vegetable oil
- small onion, chopped
- small green bell pepper, finely chopped
- small red bell pepper, finely chopped
- ground coriander
- ground cumin
- ground turmeric
- 15-ounce can black beans, rinsed, drained
- coarsely chopped fresh cilantro
- Kosher salt, freshly ground pepper
- whole wheat tortillas, warmed
- Garnishes: salsa, chopped avocado, grated cheddar, sliced scallions, and hot pepper sauce (optional)
Pineapple Dream Dessert

Preheat oven to 300F. Crush your graham crackers
- Crust:
- 2 1/2 cups graham cracker crumbs
- 1/2 cup butter
- Filling:
- 4 oz. cream cheese, softened
- 1/2 cup butter, room temperature
- 2 cups powdered sugar
- 1 (8 oz.) container frozen whipped topping (COOL WHIP), thawed
- 1 (20 oz.) can crushed pineapple, drained well

In a large pot, cover onion, carrots, celery, garlic, and sweet potatoes with water and bring to a boil
- 1 large chopped onion
