Combine butter, garlic, onion and celery in a saucepan
- 3 ounces butter
- 2 cloves garlic, finely chopped
- 1/2 medium onion, finely chopped
- 3 stalks celery, finely chopped
- 3 Tablespoons flour
- 2 (6-ouce) cans clams, chopped with liquid reserved
- 1 quart half-and-half
- 1/4 teaspoon ground thyme
- 1 teaspoon salt
- Spaghetti, cooked according to package directions.
Braised Chicken with Mushrooms

Place the dried mushrooms, and stock in small pot over medium-high heat
- For Serving:
- 1 ounce dried porcini mushrooms
- 2 cups chicken stock
- Olive oil, for frying
- 4 pieces chicken leg quarters, bone-in, skin-on
- Kosher salt and freshly ground black pepper
- 1 pound cremini mushrooms, thinly sliced
- 2 onions, sliced
- 2 carrots, finely chopped
- 2 ribs celery, finely chopped
- 5 to 6 cloves garlic, thinly sliced
- A few sprigs thyme, leaves picked and finely chopped
- 2 large fresh bay leaves
- 1/2 to 3/4 cup Marsala or white wine
- 1/2 cup celery tops or flat-leaf parsley, chopped
- Quick-cooking polenta made to package directions, or crusty-style bake-off packaged bread such as ciabatta or, fresh crusty bread - pop in freezer if storing more than one night
Cabbage Chicken Salad

Mix all salad ingredients together in a large bowl
- Salad:
- 1 large raw green cabbage sliced
- 1 package of instant dry Ramen noodles (do not use the flavor packet)
- 4 green onions diced
- 4 Tablespoons sliced almonds
- 4 Tablespoons sesame seeds (optional)
- 2 chicken breasts cooked, skinned and cut into small pieces (can substitute Turkey)
- Marinade:
- 4 Tablespoon sugar
- 1 cup salad oil
- 2 teaspoon Accent
- 6 Tablespoon vinegar
- 2 teaspoon salt
- 1/2 - 1 teaspoon pepper

Chicken Cordon Bleu

- 4 boneless, skinless chicken breasts
- 8 thin slices of cooked ham
- 4 slices of swiss cheese (1 1/4" X 1/2")

- 1/4 cup melted butter
- 1/2 cup Corn Flake crumbs
