Corn and Cheese Chowder

In a large pot, melt the butter over medium-high heat
- 4 tablespoons (1/2 stick) butter
- 1 whole onion, chopped
- 3 slices bacon, cut into pieces
- 3 whole bell peppers, finely diced (red, yellow, orange)
- 5 ears corn, kernels sliced off
- 1/4 cup all-purpose flour
- 3 cups chicken stock or broth
- 2 cups half-and-half
- 1 heaping cup grated Monterey Jack
- 1 heaping cup grated pepper Jack
- 1/3 cup sliced green onions
- Salt and freshly ground black pepper
- 12 bread bowls, hollowed out

Directions: Preheat oven to 400 degrees
- One 24-oz. bag (about 6 cups) frozen Green Giant Family Size Broccoli, Carrots, Cauliflower & Cheese Sauce
- 1 pouch Betty Crocker Cheddar & Sour Cream Mashed Potatoes
- 2 cups frozen ground-beef-style soy crumbles (like the kind by Boca or MorningStar Farms)

- One 10-ounce can diced tomatoes and green chiles, such as Rotel
- 1 teaspoon cumin (or more to taste)
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon turmeric
- 6 to 8 cups low-sodium chicken broth (more if needed)
