German Red Cabbage

Also known as Blaukraut meaning "blue cabbage" or Rotkraut / Rotkohl which means "red cabbage"
- 1 medium head red cabbage, cored and sliced
- 2 large tart apples, peeled and sliced
- 1 medium sweet onion, sliced and separated into rings
- 1/8 cup red wine or chicken stock
- 1 1/2 cups water
- 4 teaspoons cider vinegar
- 1/2 cup jelly (Apple or currant)
- 1 tablespoon olive oil or bacon fat
- 1/8 teaspoon each salt and pepper
- 1/8 teaspoon ground clove
CLAM CHOWDER (LIKE QUIZNO'S)

Clean the clams and place them in a large pot along with the garlic and water
- 4 quarts littleneck clams (about 1 2/3 cups cooked and chopped)
- 1 clove garlic, chopped
- 1 cup water
- 2 ounces salt pork, finely chopped
- 2 cups chopped yellow onions or shallots
- 3 tablespoons flour
- 1 1/2 pounds potatoes, peeled, and diced into 1/4-inch cubes
- 4 1/2 cups clam broth
- 3 cups fish stock
- 2 cups heavy cream
- 1 tsp pepper
- Salt to taste
- 1/2 cup sherry
Pretzel Hot Dog Buns

In a small saucepan, heat the milk, 1/2 cup water, sugar and honey to 105 to 110 degrees F
- 1 cup milk
- 1/4 cup light brown sugar
- 2 tablespoons honey
- 1 packet active dry yeast
- 2 tablespoons unsalted butter
- 2 small cloves garlic, grated
- 3 cups all-purpose flour, plus more for dusting
- 1 cup bread flour
- 1/2 cup baking soda
- Pretzel salt or coarse ground sea salt, for sprinkling
Creamy White Chicken and Artichoke Lasagna

HEAT oven to 350°F. COMBINE chicken, artichokes, 1 cup mozzarella, Parmesan and tomatoes

- 1 can (14 oz.) artichoke hearts, drained, chopped

- 1/2 cup KRAFT Grated Parmesan Cheese
- 1/2 cup chopped drained oil-packed sun-dried tomatoes
- 2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1 cup milk
- 1/2 tsp. garlic powder
- 1/4 cup tightly packed fresh basil, chopped, divided
- 12 lasagna noodles, cooked
Cacciucco alla Livornese - Livorno's Zesty Stewed Fish

The Fish: Whatever is in season (it needn't be expensive), for example, sole, mullet, catfish, dogfish, goby, squid...
- 1 1/2 to 2 pounds of mixed fish (see list)
- A half a medium onion, minced
- 2 cloves garlic
- A bunch of parsley, minced
- 2 tablespoons olive oil
- 3/4 pound sliced fresh or canned plum tomatoes (if they're fresh, blanch and peel them)
- 2 tablespoons red wine vinegar diluted in 3/4 cup of water
- Salt to taste
- Crumbled or minced hot red pepper (about a half teaspoon, or to taste - don't overdo it)
- Toasted Italian bread rubbed with garlic

- 1 cup heavy cream
- 2 cups whole milk, divided 1 cup granulated sugar

Chicken Salad

In a mixing bowl, toss together the chicken, celery, scallions and herbs
- 4 cups diced poached chicken, recipe follows
- 1 stalk celery, cut into 1/4-inch dice
- 4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
- 1 1/2 teaspoons finely chopped fresh tarragon or fresh dill
- 2 tablespoons finely chopped parsley
- 1 cup prepared or homemade mayonnaise
- 2 teaspoons strained freshly squeezed lemon juice
- 1 teaspoon Dijon mustard
- 2 teaspoons kosher salt
- Freshly ground black pepper
Pork Brisket braised in Milk

Rub the salt, pepper, and herbs all over the meat
- 1 three to four pound skin-on, boned-out pork brisket, to be rolled and tied up
- Salt and pepper
- Fresh sage and thyme, 1 tablespoon of each, chopped, or 1/2 teaspoon dried
- 2 tablespoons olive oil or lard
- 1 tablespoon garlic
- 1 quart whole milk
- 2 bay leaves
- The juice of 1/2 lemon
- Zest from 1 lemon
