Basic Guacamole + Additions

In a medium bowl, use a fork or potato masher to mash the avocados
- Chipotle Corn:
- 4 Hass avocados, skins and pits removed
- 4 teaspoons lime juice
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Shrimp & Mango (photo)
- 9 ounces tiny cooked shrimp (Oregon bay shrimp)
- 1 mango
- Hot sauce
- 1 tablespoon olive oil
- 1/4 cup diced red onion
- 1 cup corn kernels (if canned, drain them very well)
- 3 cloves garlic, minced
- 1 diced canned chipotle chile (packed in adobo sauce) plus 1 tablespoon (more or less, to taste) of the sauce.
- Sweet Heat Bacon:
- 8 ounces bacon
- Brown sugar
- Hot sauce
Doughnuts-Vanilla Glazed Brioche

Yeasted, glazed doughnuts are otherworldly when made fresh at home, and these are some of the best we’ve tried
- For the doughnuts:
- 227 grams whole milk (1 cup)
- 21 grams (2 tablespoons plus 1 teaspoon) dried yeast, preferably SAF brand
- 21 grams warm water (105 degrees);
- 2 tablespoons plus 1/2 teaspoon) 750 grams flour (5-1/2 cups plus 2-1/2 tablespoons), plus more for rolling
- 113 grams granulated sugar (1/2 cup)
- 14 grams kosher salt (2-1/2 teaspoons)
- Scrapings of 1 vanilla bean (may substitute 1-1/2 teaspoons vanilla bean paste)
- 3 large eggs plus 5 large egg yolks (about 240 grams total)
- 285 grams unsalted butter (20-1/2??? tablespoons), at room temperature
- 2 quarts vegetable oil, for frying
- For the glaze
- 5 About 5 cups confectioners’ sugar
- 1/2 to 3/4 cup hot water
- Generous 1/2 cup vanilla extract
- 2 teaspoons kosher salt
- Scrapings of 1 vanilla bean (may substitute 1-1/2 teaspoons vanilla bean paste)

- ››Butter, (real) maple syrup, fruit preserves and other garnishes should be served at room temperature, not straightfrom- the-fridge.
- 200-degree to hot out of the waffle maker. Although best served immediately, waffles can be kept in a 200-degree oven, in a single layer, until ready to serve.
- ››Make your own frozen waffles. Freeze in single layers, then reheat in the toaster. They’ll beat any factory-made waffle.

It was in Madrid in March where I first met salmorejo, gazpacho's richer, deeper cousin

- 1 clove garlic, crushed
- 1 baguette (about 10 oz.), cut into large pieces
- 1/2 small yellow onion
