Onion-Smothered Chicken

1Cut the chicken into quarters and trim excess fat
- 1 (3-pound) chicken
- 3 or 4 large onions
- 3 or 4 unpeeled new potatoes, scrubbed
- 1/4 cup olive oil
- 1 cup cooking sherry or nonalcoholic cooking sherry
- 3 or 4 bay leaves
- 3/4 tablespoon grated gingerroot
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/8 teaspoon dried thyme
- 1/8 teaspoon dried rosemary
Cheesy Hash Browns

- Topping Ingredients:
- 1 package Simply Potatoes® Shredded Hash Browns
- 1 can (10 3/4 ounces) cream of chicken soup
- 2 cups (8 ounces) Crystal Farms® Shredded Cheddar Cheese
- 3/4 cup sour cream
- 1/4 cup chopped onion

Monte Cristo Waffle-Wiches

- 1 tablespoon Dijon mustard
- 4 eggs
- 1/2 cup milk

1.In a skillet heat the butter or margarine and oil over medium high until the butter/margarine melts
- 1/2 cup butter
- 1/4 cup olive oil
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 3 cloves garlic, minced
- 3/4 teaspoon salt
- 1 tablespoon lemon juice
- 4 boneless chicken breast halves, sliced lengthwise into thirds

- 6 tablespoons butter
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chopped leeks
- 16 ounces mushrooms, sliced
- 4 cups finely chopped peeled potatoes1 (49-ounce) can plus 1 (32-ounce) can chicken broth, divided
- 1/2 teaspoon each salt, black pepper and dried tarragon1 cup each whipping cream and milk

- 1 head iceberg lettuce1 each medium green bell pepper, onion and carrot
- 1 (10-ounce) package frozen peas, thawed
- 1 (7-ounce) can sliced water chestnuts, drained
- 1 1/2 cups mayonnaise
- 1/2 cup ranch salad dressing
- 1 tablespoon lemon juice

Bacon Wrapped Beef Tenderloin Steaks with Spinach and Cheese Cakes

Defrost spinach in microwave
- Spinach and Cheese Cakes:
- 2 packages frozen chopped spinach, 10 ounces each
- 3 tablespoons extra-virgin olive oil, 1 for onion, 2 tablespoons to fry cakes
- 1 small onion, chopped
- 1/2 cup Italian bread crumbs, 3 handfuls
- 1/3 cup grated Parmigiano-Reggiano, 2 handfuls
- 1 egg, beaten
- 1/4 teaspoon freshly grated nutmeg, eyeball it
- Coarse salt and freshly ground pepper
- Steaks:
- 4 thin slices bacon, look for packaged bacon marked "Center Cut" in packaged meats case
- 4 beef tenderloin steaks, 1 1/2 inches thick
- Coarse salt and cracked black pepper, season to your tastes
- 2 tablespoons butter, divided
- 1 tablespoon all-purpose flour
- 1/2 cup dry red wine
- 1/2 cup beef stock, available on soup aisle
- Plate Garnish:
- 4 small Roma tomatoes
- Extra-virgin oil, for drizzling
