Mushroom-Shallot Quiche

- 1 1/2 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
- 1 large egg
- 1 teaspoon cold water
- FILLING
- 1 large egg white, lightly beaten
- 1 1/2 tablespoons unsalted butter
- 1/3 cup chopped shallots (about 2 medium)
- 1/2 pound mushrooms, cut into 1/4-inch slices
- 5 teaspoons chopped fresh thyme, divided
- 3/4 cup whipping cream
- 2 large eggs
- Pinch of salt
- Pinch of ground black pepper
- 2 green onions (white and pale green parts only), thinly sliced
- 2 tablespoons finely grated Gruyère cheese
Crab Cake Burgers

These burgers have a true crab flavor that isn't masked by fillers or strong seasoning
- 1 pound(s) crabmeat
- 1 egg, lightly beaten

Pepperoni Pizza Lasagna Rolls

Preheat oven to 350 degrees Fahrenheit
- 8 lasagna noodles, cooked al dente
- 15 ounce part skim ricotta
- 1 large egg yolk
- 1 cup shredded mozzarella, divided
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried parsley flakes
- 1/4 teaspoon garlic powder
- 2 cups pizza sauce
- 1/4 pound deli-style sliced pepperoni (32 slices)
- Salt and pepper to taste
Swordfish Sicilian-Style

- 2 tablespoons fresh lemon juice
- 2 teaspoons table salt
- 2 teaspoons chopped fresh oregano or 1 teaspoon dried
- 1/4 cup extra-virgin olive oil
- Freshly ground pepper
- 2 pounds swordfish steaks, cut 1/2 inch thick
Sesame Tamari Vinaigrette

1.Whisk orange juice, vinegar, tamari, oil, honey and ginger in a small bowl until the honey is incorporated
- 1/4 cup orange juice
- 1/4 cup rice vinegar
- 2 tablespoons reduced-sodium tamari, or reduced-sodium soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon honey
- 1 teaspoon fresh ginger, finely grated

Cheesy Chicken Ranch Lasagna

It's a Cheesy Chicken Lasagna, but really it's Chicken Ranch Lasagna because it's got a ranch sauce in it
- 2 (12 oz) cans evaporated milk
- 1 (1 oz) pkg. Hidden Valley dry Salad Dressing & Seasoning Mix (not the dip blend) -it IS gluten free
- 3 C. cubed, cooked, chicken
- 1/8 tsp pepper
- 1 (16oz) lasagna noodles, cooked (I used 9 noodles) -use gluten free penne pasta
- 1 1/2 to 2 C cheddar cheese, grated
- 1 1/2 to 2 C mozzarella cheese, grated

- 1/2 tsp. granulated sugar
- 1/2 tsp. fresh ground black pepper
- 1/4 tsp. salt
- Salad
- 3 c. chopped chicken, chilled
- 1 c. diced apple
- 2/3 c. seedless red grapes, quartered
- 1/2 c. diced celery
- 6-7 c. mixed salad greens
- 1/3 c. glazed walnuts
- 1/4 c. crumbled Gorgonzola cheese
Baked potato Soup

In a 6- to 8-quart stockpot over medium heat, fry bacon until crisp
- 1 pound bacon, roughly chopped
- 1 medium yellow onion, diced
- 1 large carrot, peeled and diced
- 3/4 cup diced celery
- 4 large Russet potatoes, peeled and diced
- 4 medium red potatoes, diced
- 1/4 cup flour
- 2 cups chicken or vegetable stock
- Coarse salt, freshly ground pepper, to taste
- 4 cups heavy whipping cream
- Optional garnishes: chopped chives, bacon bits, sour cream, shredded cheddar and Monterey Jack cheese
