- 1 1 1 tablespoon cornflour / plain flour, seasoned with salt, black pepper and herbs (if using)
- 1/4 1/4 1/4 tablespoon olive oil
- 3/4 3/4 3/4 tablespoon butter, divided
- 1/4 1/4 1/4 small onion, peeled and diced
- 1 1 1 clove garlic, peeled and minced
- 115 115 115 grams mushrooms, quartered
- 1/4 1/4 1/4 cup chicken stock

- Herbs (thyme, rosemary etc)

Instructions To roast the red peppers: Set your oven to the Broil setting
- 6 small Ciabatta rolls (or you can use large buns or bread and slice up after)
- 2-3 Tbsp. butter
- 3 red peppers
- 1 large bunch of arugula, rinsed and patted dry
- 1 (200g) carton of Tre Stelle™ Bocconcini medallions (or if unavailable, you can slice a Bocconcini ball)
- Assorted Italian cold meats, about 250 – 300g. (I used Soppressata Salami, Capocollo and Napoli Salami)

- 1/2 tablespoon raw organic honey
- 1/2 teaspoon red pepper flakes
- 1 teaspoon black peppercorns
- 2 whole anise pods
- 1 bay leaf
- Chopped cilantro, to serve
- 8 tablespoons ketchup
- 2 tablespoons Sriracha
- 1 tablespoon raw organic honey
- 2 teaspoons freshly squeezed lime juice

Instructions Heat the oven to 200c or 390f, prepare a baking dish and set aside
- 2 rabbit thighs (weighing 550g or 1.2 lbs)*
- 2 tbsp olive oil
- 2 large cloves of garlic, crushed and roughly chopped
- 1 cup or 250 ml low-sodium chicken or vegetable broth
- 1 tsp dried sage, crumbled
- 3-4 tsps of German style or Dijon or any smooth grainy mustard, or to taste
- 1 heaping tbsp honey, or to taste
