Best Baked Brownie

The famed Baked brownie. Oprah says it’s one of her favorite things
- 1 1/4 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons dark unsweetened cocoa powder
- 11 ounces dark chocolate, coarsely chopped
- 1 cup (8 ounces) unsalted butter, cut into 1-inch pieces
- 1 teaspoon instant espresso powder
- 1 1/2 cups granulated sugar
- 1/2 cup packed light brown sugar
- 5 eggs, at room temperature
- 2 teaspoons vanilla extract
Cayanne Chicken with Avacado Salsa

Directions In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon pepper, and cayenne; rub all over chicken
- Coarse salt and ground pepper
- 1/4 teaspoon cayenne pepper
- 4 boneless, skinless chicken breast halves, (6 to 8 ounces each)
- 2 tablespoons olive oil
- 1 medium red onion, finely diced
- 2 tablespoons fresh lime juice
- 1 Hass avocado, pitted and cut into chunks
Chicken Burgers with Garlic-Rosemary Mayonnaise

Garlic-Rosemary Mayonnaise In a small bowl, mix together mayonnaise, garlic, and rosemary; set aside
- Garlic-Rosemary Mayonnaise
- 1 cup mayonnaise
- 1/4 cup fresh rosemary leaves, chopped
- 1 clove garlic, minced
- Chicken Burgers
- 1 pound ground chicken
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup arugula
- 4 sandwich rolls or burger buns
- 1/4 cup olive oil
Basalmic Pot Roast

While I prefer to cook my pot roast in a crock pot, I do think it's essential to sear the meat first
- 3 lbs beef chuck roast, boneless
- Garlic salt & pepper seasoning
- 2 tbsp olive oil
- 1 onion, sliced
- 2 sprigs of fresh rosemary
- 2 bay leaves
- 2 fresh sage leaves (or a sprinkle of powdered sage)
- 2 cloves garlic, chopped
- 1 cup red wine
- 1/3 cup GOOD balsamic vinegar
- 1 , 14.5oz can beef broth
- 3 tbsp corn starch
- Salt & Pepper
- Baby carrots, about a bag
- 2 medium potatoes, cut into mouth sized pieces
Homemade Apple Fritters

Mix all dry ingredients together, slowly add the wet ingredients minus the apple
- 1 heaping cup AP flour
- 1/3 cup sugar
- 1 tsp. baking powder
- dash salt
- 1 – 2 tsp. cinnamon (depending on how much you love cinnamon)
- 1/4 tsp. nutmeg
- 1/2 tsp. vanilla
- 1 T. butter, melted
- 1 egg
- 1/3 cup milk + plus more if needed
- 1 – 1 1/2 cups chopped apple, your favorite kind for eating, peanut sized or smaller
- oil for frying
- milk and powdered sugar glaze for dipping or just powdered sugar for dusting
- (About 1 cup pwd. sugar + 1 T. milk or more)

- 1 pound(s) ground chicken breasts
- 1 medium carrot, grated (1/2 cup)
- 2 green onions, minced
- 1 clove(s) garlic, crushed with garlic press
- 4 hamburger buns, warmed
- Sliced cucumber, lettuce leaves, and green onion (optional)
Chicken Dijon

In a large skillet, toast the coriander seeds over moderately high heat until fragrant, about 2 minutes
- 1 teaspoon coriander seeds
- 2 tablespoons extra-virgin olive oil
- 8 medium chicken drumsticks (about 3 pounds)
- Salt and freshly ground pepper
- 1/4 cup finely chopped onion
- 4 garlic cloves, minced
- 1 1/2 cups low-sodium chicken broth
- 2 tablespoons whole-grain mustard
- 3 tablespoons crème fraîche or sour cream
- 2 teaspoons chopped tarragon
- Crusty bread, for serving
