- ◦1/2 teaspoon salt

- ◦3/4 cup granulated sugar
- ◦1 large egg
- ◦1 teaspoon vanilla extract

- 3/4 pound small red-skinned potatoes, halved, or quartered if large
- Kosher salt
- 2 sprigs fresh rosemary, plus 1 1/2 tablespoons leaves
- 2 cloves garlic, smashed
- Pinch of red pepper flakes
- Juice of 2 lemons (squeezed halves reserved)
- 2 tablespoons extra-virgin olive oil
- 4-6 skin-on, bone-in chicken thighs (6 to 8 ounces each)
- 10 ounces cremini mushrooms, halved

Insert shredder disk in food processor
- 2 large Potato ; peeled
- 1 small Onion
- 2 Eggs
- 4 tablespoon Milk
- 2 tablespoon Butter ; melted
- 1/4 cup Flour
- Salt & pepper ; to taste
Broccoli Cheese Soup

Sauté the onion in 1 tablespoon melted butter and set aside
- 1 tablespoon melted butter
- ½ medium chopped onion
- ¼ cup melted butter
- ¼ cup flour
- 2 cups half-and-half cream
- 2 cups chicken stock
- ½ lb fresh broccoli (about 1 cup)
- 1 cup carrot, julienned
- ¼ teaspoon nutmeg
- 8 ounces grated sharp cheddar cheese
- salt and pepper to taste
Coffee Ice Cream - Pseudo

- 3 cups of strong black coffee, cooled and chilled
- 1-2 tsp vanilla extract
- 1 can sweetened condensed milk
Lasagna Soup

Heat olive oil in a large pot over medium heat
- for the cheesy yum:
- 2 tsp. olive oil
- 1-1/2 lbs. Italian sausage
- 3 c. chopped onions
- 4 garlic cloves, minced
- 2 tsp. dried oregano
- 1/2 tsp. crushed red pepper flakes
- 2 T. tomato paste
- 1 28-oz. can fire roasted diced tomatoes
- 2 bay leaves
- 6 c. chicken stock
- 8 oz. mafalda or fusilli pasta
- 1/2 c. finely chopped fresh basil leaves
- salt and freshly ground black pepper, to taste
- 8 oz. ricotta
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. salt
- pinch of freshly ground pepper
- additional cheesy yum:
- 2 c. shredded mozzarella cheese

- 2 cups butter
- 2 ⁄3 cup white sugar
- 4 teaspoons water
- 4 teaspoons vanilla
- 4 cups sifted flour
- 2 cups chopped pecans
- 6 tablespoons powdered sugar
Oven Baked "Fried" Chicken

Mix Spices together in a small sealable bag
- 10 chicken tenderloins
- 1 cup buttermilk
- 1 cup flour
- 1 cup panko breadcrumbs
- 1/4 cup fine cornmeal
- 3 tablespoons butter
- 1 tablespoon salt (it won't taste salty)
- 2 teaspoons chili powder
- 2 teaspoons garlic powder
- 1 teaspoon pepper
- 1 teaspoon smoked paprika (may sub. regular)
- 1 teaspoon onion powder
Bundt Pan Roast Chicken

Preheat oven to 425° and cover the hole of the Bundt pan with foil
- 3 cloves garlic
- 2 carrots, chopped
- 1 onion, quartered
- 1/2 lb. yukon gold potatoes, quartered
- extra-virgin olive oil
- kosher salt
- Freshly ground black pepper
- 1 large bunch fresh thyme
- 1 large bunch fresh rosemary
- 1 3-4 lb. chicken, gizzards removed
- 1 lemon, sliced

- 5-6 Roma tomatoes, chopped
- 1 Small onion, chopped
- 1/2 Cup fresh cilantro, chopped
- 2 Serrano or Jalapeño chiles, seeded and minced
- 1 Clove garlic, minced
- 2 Tbsp. freshly squeezed lime juice
- Salt and peper to taste.
