- 1 cup dark roasted black coffee
- 2 tsp. vanilla extract

Tenderize Chicken with Coconut Milk

You may tenderize the meat with Meat tenderizer, meat tenderizer powder, or baking soda
- 2 lb. chicken tights, boneless and skinless (about 10-12 pcs.)
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/2 can of coconut milk
- 1 tsp. salt
- some chopped green onion, minced garlic and ginger
- Hot pepper paste, if you like spicy

- For Cupcakes:
- 1 box of White cake mix
- 1 1/3 cup water
- 1/3 cup cooking oil
- 3 eggs
- 1 cup fresh cranberries, coarsely chopped
- 1 cup finely chopped walnuts (or other nuts)
- For Cranberry Cream Cheese Topping:
- 1 package (8 oz.) cream cheese, at room temperature
- 1 stick butter, at room temperature
- 2 cups powdered sugar
- 1/3 cup cranberry juice
- 1 tsp. vanilla extract

- 4-6 boneless and skinless chicken thighs, sliced or cubed
- 1 small box mushrooms, sliced
- 1 yellow onion, sliced
- 1/4 cup frozen peas
- 2 Tbsp. cooking oil
- 1/4 cup Marsala cooking wine
- 1 Tbsp. soy sauce
- 1 Tbsp. sugar
- salt and ground black pepper to your taste

This is a Chinese Sichun Style spicy chicken
- 2 Boneless chicken thighs (with skin)
- 2 Tbsp. La Yu (chili oil, maybe purchased in Asian grocery section)
- 3 Tbsp. white wine vinegar
- 1 Tbsp. light soy sauce
- 1/2 tsp. sugar
- 1 chopped green onion
- 1 Tbsp. grated ginger
- 2 gloves chopped garlic
- some chopped roasted peanuts
- Pinch of salt to your taste
