Chicken in Tarragon Cream Sauce | Pyrenees Vineyard & Cellars

Rinse and pat dry chicken
- 6 chicken thighs -bone in or boneless, skinless works great
- 1/4 cup minced shallots
- 2 Tbs butter
- 2 Tbs extra virgin olive oil
- 1/2 cup of Pyrenees 2006 Chardonnay
- 1 Tbs chopped fresh tarragon (you can substitute 1-2 tsp of dried but it is better with the fresh tarragon.)
- 3/4 cup heavy cream or whipping cream
- 1-2 Tbs fresh lemon juice
- Salt and pepper
Pork Chops with Sage-Garlic Butter

In heavy skillet, heat olive oil & butter, sprinkle chops with salt & pepper & cook till browned
- 1/2 stick butter, melted
- 1/2 small red onion, chopped
- 1 tsp. rubbed or ground Sage
- 3 lrg. cloves garlic, minced
- 1 Tbsp. Parsley, dried or 1/4 c. chopped fresh.
- 1 Tbsp. Olive Oil
- 4 3/4 in. thick pork loin chops
Bread Pudding with Bourbon Sauce

Spread bread cubes evenly in a 2-quart oblong baking dish
- Bourbon Sauce:
- 4 cups bread cubes (4 to 5 slices)
- 1/2 cup packed brown sugar
- 1/2 cup raisins
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 cups milk
- 1/4 cup butter
- 2 eggs, beaten
- 1 teaspoon vanilla
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon cinnamon
- 1/2 cup water
- 1/4 cup bourbon
Peg Swingle's Snickerdoodle Cookies

Preheat oven to 400 degrees
- Topping:
- 1/2 C. butter or margarine
- 1/2 C. shortnening (Peg uses Crisco)
- 1 1/2 C. sugar
- 2 eggs
- 1 t. vanilla
- 2 2/3 C. flour
- 2 t. cream of tarter
- 1 t. baking soda
- 1/4 t. salt
- 2 T. sugar
- 1 t. cinnamon

Make two separate batches
- 1/3 C. soft butter
- 3/4 C. sugar
- 1 egg
- 1 egg yolk
- 1 T. grated lemon
- 2 C. flour
- 1/4 t. salt
- 1 egg white, slightly beaten
Very Lemony Chicken

1. Place chicken in 13x9x2" glass baking dish
- 1-1/2 lb. chicken breast, skinned and fat removed
- 1/2 cup fresh lemon juice
- 2 tablespoons white wine vinegar
- 1/2 cup fresh sliced lemon peel
- 3 teaspoons chopped fresh oregano or 1 teaspoon dried oregano, crushed
- 1 medium onion, sliced
- 1/4 teaspoon salt
- black pepper to taste
- 1/2 teaspoon paprika
Hunt's Basil Pesto Pomodoro Sauce

Spray large skillet with cooking spray
- PAM Olive Oil No-Stick Cooking Spray
- 1 cup chopped white onion (1 cup = 1 large)
- 2 cans (14.5 oz each) Hunt's Diced Tomatoes, undrained
- 1/4 cup prepared basil pesto
- Hot cooked pasta, chicken or fish, optional
Red Velvet Cookies - Sharon Montgomery (2008)

Mix cake mix, eggs, water and shortening until well-blended
- 1 box red velvet cake mix (2-layer size)
- 2 eggs, slightly beaten
- 1 T. water
- 1/2 C. solid vegetable shortening (the trans fat-free kind works fine)
- 3/4 C. white baking chips
Viennese Vanilla Cookies - Mike Andrako (2008)

Cream butter and add sugar
- 1 cup unsalted butter, softened
- 1/2 cup sugar
- 2 cups sifted flour
- 1 1/4 cups shaved Almonds (not the slivered almonds, but the flat cuts
- w/ bits of brown on them)
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- Confectioner's Sugar for decoration
LOW CARB ENGLISH MUFFIN VARIATION

In a small bowl, mix everything together well with a fork
- 1/3 cup almond flour (1 1/4 ounces)
- 2 tablespoons golden flax meal
- 3/4 teaspoon baking powder
- Pinch salt
- 1 egg
- 1 tablespoon water
- 1 tablespoon oil
