Slow-Fried Herbed Salmon in EVOO

The herbs in the recipe are just suggestions; other fresh herbs, such as chives, tarragon, sage, oregano, cilantro ...
- 1 1/2 pounds center-cut salmon fillet, skinned and cut crosswise into 4 portions
- 2 T. EVOO
- 1/3 C. finely chopped fresh parsley (or about 1/4 C. dried)
- 2 T. minced fresh dill (or about 2 t. dried)
- 1 t. minced fresh thyme leaves (or about 1/2 t. dried)
- coarse kosher or sea salt
- freshly ground black pepper
Lemon Pepper Chicken & Pasta

Mix together all sauce ingredients
- Sauce
- 3 green onions, chopped
- 1/3 C. olive oil
- 1/2 C. Vegetable Oil
- 1 T. Sugar
- 1 T. Lemon Peel
- 2 T. Dijon Mustard
- 3 T. Lemon Juice
- 3 T. White Wine Vinegar
- Chicken
- 3 large boneless chicken breasts, sliced and cooked with garlic, white wine, lemon pepper seasoning, salt and lemon juice to taste
- 16 oz. cooked bow tie or penne pasta
Oven Risotto - Easy-To-Make Oven Risotto

Preheat oven to 425 degrees F
- 2 tablespoons unsalted butter
- 1/4 cup finely-chopped onion
- Small pinch of saffron threads, crumbled
- 3/4 cup Arborio rice
- 3 cups good-quality chicken stock or broth, divided
- 1/4 cup dry white wine
- 1 tablespoon unsalted butter
- Salt and freshly-ground pepper to taste
- 1/4 cup freshly-grated Parmigiano-Reggiano cheese
Mandarin Salad

Make dressing and refrigerate
- Dressing:
- 1/2 t. salt, dash pepper
- 2 T. Sugar
- 2 T. Vinegar
- 1/4 C. salad oil
- dash red pepper sauce
- 1 T. snipped parsley
- 1/4 C. sliced almonds
- 1 T. plus 1 t. sugar
- 1/4 head lettuce
- 1/4 head romaine
- 1 C. chopped celery
- 2 green onions with tops, thinly sliced
- 1 can, drained 11 oz. mandarin oranges
Crunchy Slaw by Mike Owens

Mix together the oil, vinegar, sugar and the 2 flavor packets from the noodles for the dressing
- 1 Bag coleslaw
- 2 packages Beef ramen noodles
- 1 cup sunflower seeds
- 1/2 cup slivered almonds
- 1 cup oil (I use a little less)
- 2/3 cup apple cider vinegar
- 3/4 cup sugar
Coleslaw Dressing

Scoop the mayonnaise from the measuring cup into a medium size bowl
- 1 C. mayonnaise
- 1/4 C. sugar
- 2 t. vinegar
- 1/4 C. very finely chopped onion
- 1/2 t. celery seeds
- 1 t. yellow mustard
Ten Minute Enchilada Sauce

1. Heat oil in a skillet over medium-high heat
- 1/4 cup vegetable oil
- 2 tablespoons self-rising flour
- 1/4 cup New Mexico or California chili
- powder
- 1 (8 ounce) can tomato sauce 1 1/2 cups water
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion salt
Barley Mushroom Soup with Soy Crumbles

Mix all ingriends together in crock pot and cook on low 4-6 hours
- leftovers from Barley Mushroom Casserole
- 64 oz. homemade chicken stock
- 1 can Del Monte sliced carrots, drained
- 1 t. dried terragon
- 1/2 t. garlic powder
- 1/2 t. onion powder
- 1 12-16 oz. bag frozen soy crumbles

Directions Preheat the oven to 350 degrees F
- 3 cups all-purpose flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 pound unsalted butter, melted and cooled
- 2 extra-large eggs
- 3/4 cup whole milk
- 2 teaspoons pure vanilla extract
- 1 cup mashed ripe bananas (2 bananas)
- 1 cup medium-diced ripe bananas (1 banana)
- 1 cup small-diced walnuts
- 1 cup granola
- 1 cup sweetened shredded coconut
- Dried banana chips, granola, or shredded coconut, optional
