Egg Drop Soup

In 2 Tbsp sesame oil in a 4 qt pan, cook onions until transparent
- 4 cups chicken broth (I use organic, boxed liquid broth by Swanson’s. A box = 4 cups)
- 2 eggs, lightly beaten
- 1/8 cup chopped red onion
- 2 Tbsp Sesame oil
- 1/4 tsp pepper
- 1/2 tsp Salt
- 1 tsp soy sauce
- 1/8 tsp ginger
- chopped green onion tops for garnish (optional)
Japanese Steak House Salad Dressing

Combine all ingredients. Add a few drops of lemon juice and mix thoroughly

- 1 box yellow Bakers Corner (Aldi) cake mix
- 1 cup flour
- 1 cup sugar
- 3/4 t salt
- 1 1/3 cups water
- 2 T canola oil
- 1 t vanilla extract
- 1 cup sour cream
- 4 large egg whites
- Preheat oven to 325°F. Place cupcake liners in cupcake pans (you'll need approx. 36).
- In a large bowl, whisk together cake mix, flour, sugar and salt. Add remaining ingredients and beat with hand mixer for 2 minutes, or until well blended.
- Use ice cream scoop to fill prepared cupcake tins- fill about 3/4 full. Bake about 18 minutes, or until toothpick inserted in center comes out clean.

- 1 tablespoon olive oil
- 1/4 cup finely chopped onion
- 3/4 cup arborio rice
- 1/4 cup dry white wine (optional)
- 2 -2 1/4 cups hot water, divided ( use more water if you omit the wine)
- 1/2 cup canned low sodium chicken broth
- 3/4 teaspoon coarse salt
- 1/8 teaspoon fresh ground pepper
- 1 tablespoon unsalted butter
- 1/4 cup freshly grated Parmesan cheese

- 1/2 of a 15-ounce package folded refrigerated unbaked pie crust (1 crust)
- 1-1/2 cups shredded mozzarella cheese (6 ounces)
- 5 Roma tomatoes or 4 medium tomatoes
- 1 cup loosely packed fresh basil leaves
- 4 cloves garlic
- 1/2 cup mayonnaise or salad dressing
- 1/4 cup grated Parmesan cheese
- 1/8 teaspoon ground white pepper
- Fresh basil leaves (optional, for garnish)
